The safe internal temperature standard for cooked chicken is 165° Fahrenheit (75° Celsius). While this is the safe temperature for both dark meat and light meat and is great for chicken breast, I always suggest that you cook chicken thighs to a temperature of 185°F for texture. This is what all the best chefs recommend and you will see how the meat on chicken thighs literally falls off the bone when cooked longer!
Our favorite meat or instant-read thermometer is the best way to determiner the temperature of your chicken, and if you’re cooking a whole chicken the thermometer should be inserted into the thickest part of the thigh making sure not to touch the bone.
