How To Make Dutch Pear Pie Bars

  1. Preheat the oven to 350°F, line an 8×8 pan with parchment paper, and set aside.
  2. Combine the pear pie filling ingredients in a small pot and simmer over medium heat, stirring often.
  3. Cook until the pears are soft but still have their shape, and the sauce has thickened.
  4. Remove and let the mixture cool.
  5. Prepare the crust and topping by mixing the brown sugar and butter until creamy and fully combined.
  6. Stir in the rolled oats, flour, salt and baking soda. Mix until completely combined.
  7. Press 2/3 of the crust mix into the bottom of the prepared pan.
  8. Pour the cooled filling onto the bottom crust and spread it evenly.
  9. Crumble the remaining oatmeal mixture on top of the filling.
  10. Bake until the oatmeal topping is lightly browned on top, and the pear filling starts to bubble up around the sides, about 25-35 minutes.

Ingredients 

Crust and Topping

  • 1 cup salted butter, softened
  • 1 cup brown sugar, packed
  • 1 ½ cups rolled oats
  • 1 ¼ cups flour
  • 1 tsp baking soda

Pear Pie Filling

  • 2 cups pears, peeled and chopped
  • 2 tablespoons unsalted butter
  • ¼ cup light brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • pinch ground nutmeg
  • 2 tablespoons water
  • ¼ teaspoon salt
  • 1 batch salted caramel sauce, if desired

Instructions 

  • Preheat your oven to 350°F. Line an 8×8 pan with parchment paper and set aside.
  • Combine the ingredients for the pear pie filling into a small pot and start simmering over medium heat, stirring often.
  • Cook until the pears have softened but still have their shape, and the sauce has thickened. Remove and let the mixture cool.
  • Prepare the crust and topping.
  • Mix the brown sugar and butter together until creamy and completed combined.
  • Stir in the rolled oats, flour, salt and baking soda. Mix together until completely combined.
  • Press 2/3 of the crust mix into the bottom of the prepared pan.
  • Pour the cooled filling on top of the bottom crust and spread it into an even layer.
  • Crumble the remaining oatmeal mixture on top of the filling in an even layer.
  • Bake in the preheated oven until the oatmeal topping is lightly browned on top and the pear filling starts to bubble up around the sides, approximately 25-35 minutes.
  • Cool completely and then cut into pieces. I find this cuts best when refrigerated for a few hours first.
  • Serve with salted caramel sauce drizzled over top.
