These delicious Dutch pear pie bars have a pear filling, a buttery brown sugar oat crust and crumble topping - add a drizzle of salted caramel and you have the perfect dessert!
Preheat your oven to 350°F. Line an 8x8 pan with parchment paper and set aside.
Combine the ingredients for the pear pie filling into a small pot and start simmering over medium heat, stirring often.
Cook until the pears have softened but still have their shape, and the sauce has thickened. Remove and let the mixture cool.
Prepare the crust and topping.
Mix the brown sugar and butter together until creamy and completed combined.
Stir in the rolled oats, flour, salt and baking soda. Mix together until completely combined.
Press 2/3 of the crust mix into the bottom of the prepared pan.
Pour the cooled filling on top of the bottom crust and spread it into an even layer.
Crumble the remaining oatmeal mixture on top of the filling in an even layer.
Bake in the preheated oven until the oatmeal topping is lightly browned on top and the pear filling starts to bubble up around the sides, approximately 25-35 minutes.
Cool completely and then cut into pieces. I find this cuts best when refrigerated for a few hours first.
Serve with salted caramel sauce drizzled over top.
