The term “Marry Me” in recipes refers to a dish that includes a sauce that has cream, garlic, Parmesan, and sun-dried tomatoes. The sauce is used in many dishes and I was ready to try it in a soup!
I’m definitely going to be looking into more ways to incorporate gnocchi into my soups because this one is fantastic and the combination of flavors and textures is very satisfying. If you love a good hearty soup, you are in luck.

- Skill Level: This is an easy recipe to make, just like most soups. There isn’t anything too complicated in this recipe.
- Total Time: This doesn’t take long to make (50 minutes).
- Variations: Try some different flavors of gnocchi to see what works best for you. You can also omit the meat and make this vegetarian by adding in more gnocchi or even some chickpeas for protein.
- Tools Needed: For this recipe, you’ll need a soup pot, a ladle and a frying pan.
Marry Me Gnocchi Hamburger Soup
For those of you who are looking for ways to incorporate more veggies into your diet; this has spinach and it actually tastes delicious in the soup! Seriously though, I’ve been wanting to make this for a while and I’m super glad I did, the whole family demolished it in no time and it’s now one of our favorites in the household. What You’ll Need For Ingredients
Here are a few tips for some of the ingredients in this recipe.
Gnocchi – I just picked up a bag of gnocchi (the basic flavor) and dumped the whole thing in but you may want to experiment with other varieties until you find your favorite.
Parmesan – As with anything, fresh is best and I prefer not to use the fake parmesan you buy off the shelf but to grate it myself. It just tastes better.
Spinach – Get some fresh spinach leaves and chop them up with a knife (after washing and drying them, of course).
Ground Beef or Chicken – You can use either one, I personally prefer it with ground beef but chicken tastes good too!

How to Make This Soup
This is a brief overview of the recipe. The full list of ingredients and step-by-step instructions are in the recipe card below.
- Start by frying the ground beef, then add the onions and drain the grease. Then add in the garlic.
- Sprinkle the seasonings over the meat and sauté for about a minute.
- Add sun-dried tomatoes and tomato paste and cook while stirring.
- Add the broth and the heavy cream, bring to a low boil for about 15 minutes.
- Reduce the heat, add the cream cheese and the parmesan and cook until both are well incorporated.
- Add in the gnocchi and the spinach, cook for 2-3 minutes or until the gnocchi is ready according to the package instructions.
- Garnish with parmesan and basil and serve.

Storage Instructions
This soup will last in a covered container in the refrigerator for up to 3 days. You can freeze it, but make sure to read my posts about freezing cream-based soups!

Marry Me Gnocchi Hamburger Soup
Ingredients
- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 tablespoons minced garlic
- 1 teaspoon dried Italian seasoning
- ¼ teaspoon crushed red pepper
- ⅓ cup sun-dried tomatoes , drained, diced small
- 2 tablespoons tomato paste
- 6 cups chicken broth
- ½ cup whipping cream
- 4 ounces cream cheese , room temperature
- ⅓ cup Parmesan, grated
- 350 grams gnocchi, fresh
- 4 cups fresh baby spinach, packed roughly chopped
- 2 teaspoons fresh basil for garnish, chopped
Instructions
- Place the ground beef and onions in a large pot or Dutch oven over medium heat. Fry the ground beef until no longer pink and the onions are soft. Drain the grease. Add in the garlic and sauté until fragrant.
- Sprinkle the Italian seasoning and the red pepper flakes over the meat mixture and sauté for another minute.
- Add the sun-dried tomatoes and the tomato paste. Cook, stirring constantly, for two minutes.
- Stir in the chicken broth, then stir in the heavy cream. Bring to a low boil and cook with no lid on the pot, stirring occasionally, for 15 minutes.
- Reduce the heat to low, and add the cream cheese, and Parmesan.; cook, stirring often, until cream cheese and Parmesan are melted.
- Add in the gnocchi and the spinach. Cook for 2-3 minutes or until the gnocchi is done according to the package instructions.
- Garnish with additional Parmesan and basil if desired. Serve immediately.
