  • Variations: Try changing up the seasonings for this recipe. Use a classic Fish Seasoning or some Cajun Seasoning. Use different types of bread crumbs, even crushed cornflakes. Add a pinch of red pepper flakes to the crumbs or a dash of hot sauce to the eggs if you’d like some more heat. Fresh or dried dill is also an excellent addition to recipes like this.

What You’ll Need For Ingredients

Cod: Fresh cod fillets are ideal for this recipe, but you can use frozen ones as well. Just make sure they’re fully defrosted and patted dry before you start the breading process.

Bread Crumbs: While this recipe will be at its crunchiest with panko crumbs, you can use a different variety of bread crumb. Try something that’s got bigger chunks and is substantial enough to withstand the baking time without getting mushy.

Seasonings: The seasonings in this recipe are a classic blend of garlic, onion powder, paprika, and dried parsley. You can also add salt and pepper to taste, as well as any other spices you love.

How to Make Flaky Baked Cod

  1. Preheat oven to 400°F. Line baking sheets with parchment paper and set aside.
  2. Combine Panko topping ingredients in a medium bowl. Set aside.
  3. Combine eggs and lemon juice in a small bowl.
  4. Pat dry the cod fillets. Dip each one into the egg mixture until fully coated and then into the Panko mixture.
  5. Put coated cod fillets on to baking sheet. Cook for 20-25 minutes.
  6. Serve with lemon slices.

Karlynn’s Tips and Tricks for Making Baked Cod

Don’t Overcook the Fish: Pay close attention during the last few minutes of baking time. Cook the fish just long enough for it to stop being translucent and to flake nicely under a fork, but not so long that it gets rubbery.

Extra Crispy: If you don’t mind adding an extra step to this process, you can try dredging the cod in a very small amount of flour or cornstarch before dipping it into the egg mixture. This will give the egg something to hold on to and add another layer of crunch to the fish.

Serving Suggestions: Try serving this fish with some homemade Tartar Sauce or some refreshing Dill Dip and a batch of Air Fryer Sweet Potato Fries. If you happened to use Cajun Seasoning in the breading, try mixing a pinch of that with some mayonnaise and using that as a dip.

Storage Instructions

Fridge: You can store this fish in a sealed container in the fridge for 2-3 days but you may find it gets rubbery when you reheat it.

Ingredients 

  • 2-4 medium cod fillets, cut in half

Panko Toppins

  • ¼ cup melted butter,
  • 1 cup Panko
  • 2 teaspoons granulated garlic
  • 2 teaspoons dried parsley
  • 1 teaspoon paprika
  • ½ teaspoon onion powder

Egg Mixture

  • 2 large eggs, beaten
  • 2 tablespoons lemon juice

Garnished

  • 1 medium lemon, cut into wedges

Instructions 

  • Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside.
  • Combine the Panko topping ingredients in a medium-sized bowl.
  • Combine the egg and lemon juice in a small bowl.
  • Pat the cod fillets dry with a paper towel. Take each fillet and dip into the egg mixture until coated. Dip into the Panko mixture until coated in crumbs. Place on the baking sheet.
  • Bake in the preheated oven for 20-25 minutes or until the fish flakes when pierced with a fork.
  • Remove, plate, and serve with lemon wedges.

Notes

    Would it be less cal if I use ? Less carbs. Would it taste the same
    Forgot the name of the crumbs , you need to grind them

      The problem with recipe calculators is that it calculates all of the Panko crumbs in the recipe, but you don’t actually use all of the crumbs. You won’t use the full cup, so it will be lower calorie than it shows, how much more though can’t be determined.
