Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside.
Combine the Panko topping ingredients in a medium-sized bowl.
Combine the egg and lemon juice in a small bowl.
Pat the cod fillets dry with a paper towel. Take each fillet and dip into the egg mixture until coated. Dip into the Panko mixture until coated in crumbs. Place on the baking sheet.
Bake in the preheated oven for 20-25 minutes or until the fish flakes when pierced with a fork.
Remove, plate, and serve with lemon wedges.
