Grilled chicken is delicious just on its own, especially if you immerse it first in a flavorful marinade.

However, instead of just eating it on its own, potentially with some veggies at a grill, why not turn it into a great lunch sandwich with this simple grilled chicken sandwich?

All you really need is some good quality bread and whatever sauces and toppings you prefer to turn your grilled chicken breast into one of the best, easiest lunches there is!

What Bread Is Best For This?

This recipe calls for a fairly standard sesame seed bun because the chicken should really be the thing that shines through here.

However, there is nothing stopping you from changing up whatever bread you prefer to use.

If you have a poppy seed bun instead, feel free to use that. You could also use regular sandwich bread, or even sourdough, depending on your mood and what you have available.

You could also totally change it up and not use regular bread at all – why not try an everything bagel? All of the extra flavorings and spices will definitely get in the way of the natural flavor of the grilled chicken, but if that is what you prefer, why not?

The key is that you want something soft and pliable, something that will give way when you bite it and not resist your teeth and prove an obstacle when you try to get a bite.

While crusty rolls might be great as a side dish for a larger meal, they definitely won’t be suitable for this sandwich – each bite would be too much of a chore.

How To Choose Your Toppings & Sauces

The great thing about this sandwich recipe is that there is all manner of different toppings and sauces that you can choose to put on it.

The best choices are things that can help accentuate the natural flavor of the grilled chicken; simple mayonnaise, for example, provides some much-needed fattiness without overwhelming the flavor of the chicken itself.

If you like something a bit stronger, though, you can always go down the garlic route with tasty garlic aioli. Whether you make it yourself or get it from the store, it should provide plenty of richness, umami, and saltiness to help balance the flavor of the chicken.

You can use pretty much anything you want, but make sure that whatever you choose to use has a good amount of fat in it because the one flaw of grilled chicken breasts is that they lack pretty much any fat whatsoever.

You want to make sure that you are providing that subtle contrast as well, so something a little spicy, like chipotle mayo, works well, or even just a regular chili sauce spread over the top of the chicken.

There is also the question of other toppings to go alongside your chicken and sauces – things like cheese, tomatoes, and lettuce all work well, but you could put whatever you want on!

Sliced dill pickles would work great or even some diced devilled eggs. This sandwich is honestly a great way to use up leftover ingredients that could be used to make toppings, as the grilled chicken in the sandwich is super versatile and basically goes well with anything.
