  • Skill Level: This is a very easy recipe, and you can make it even easier by buying pre-shredded chicken and prepping your ingredients in advance.
  • Total Time: This recipe will take you less than 60 minutes from start to finish. Not bad for a full meal and that gives you time to prepare any side dishes you’d like to add.
  • Variations: Try using some homemade Cream of Chicken & Cauliflower Soup instead of canned soup! Make Simple Mexican Coleslaw for a veggie-filled side, or whip up some Tex Mex Corn on the Cob. Add some extra heat with some hot peppers or a spicy variety of chips.
  • Tools Needed: You’ll need a can opener, a large bowl, a mixing spoon, and a 2qt casserole dish. If you aren’t buying shredded cheese, you’ll also need a cheese grater. You might also like to have a small spatula handy so that you can get every last bit of soup out of the can.

What You’ll Need For Ingredients

Doritos: You can use any nacho chips you’d like. Try some spicy or ranch-flavored chips.

Chicken: Any cooked chicken will do.

Cheese: Cheddar or something with a strong flavour to add some zing to this creamy casserole.

Cream of Chicken Soup: can of condensed soup

Sour Cream: Any percentage of fat is fine here.

Taco Seasoning: Make your own taco seasoning or buy some from the store.

Milk: 2% or whatever you happen to have in your fridge.

Diced Tomatoes: Rotel or something else with seasonings and/or peppers is perfect for this recipe.

How To Make Doritos Chicken Casserole

  1. Preheat oven to 350°F. Grease a casserole dish.
  2. Mix soup, sour cream, milk, taco seasoning, and tomatoes in a large bowl. Add in chicken and 2 cups of cheese.
  3. Spread half of the crushed chips in the bottom of the casserole dish. Add half the chicken mixture in an even layer. Repeat this with the other half of the chips and the other half of the chicken mixture. Add the rest of the cheese on top.
  4. Cover casserole dish with foil and bake for 30-40 minutes.

Karlynn’s Tips and Tricks for Making Doritos Chicken Casserole

Try Baked Chicken Breasts: Chicken breasts are incredibly easy to bake in advance. Why not bake a big batch and then freeze the cooked chicken to use for future meals?

Make Adjustments: Remember that you can adjust the amount of chips or cheese to your own personal taste. Reduce the amount of chips if you feel like the casserole might be too dry for you, or add more if you like a thicker dish. Add extra cheese or more types of cheese if you love cheese.

Broil: If you’d like your cheese to be crispy, take the foil off of your casserole a few minutes early and set your oven to broil for 5 minutes or so. Keep a close eye on your stove to make sure you don’t burn the cheese!

Storage Instructions

Fridge: Store the leftovers in a sealed container in the fridge for up to 4 days.

Freezer: This casserole is unlikely to freeze or defrost well.

Ingredients 

  • 1 Doritos, 459-gram bag of nacho-flavored and lightly crushed
  • 2 cups rotisserie chicken (or 2 cooked chicken breasts), Cut into small pieces
  • 2 ½ cups Shredded cheese, divided
  • 1 can mild diced tomatoes and green chiles, Ro-tel brand
  • 1 can Condensed cream of chicken soup
  • ½ cup sour cream
  • ½ cup 2% milk
  • ½ Package taco seasoning
  • Cilantro , for garnish

Instructions 

  • Preheat oven to 350°F. Lightly spray a 2 quart casserole dish with cooking spray.
  • In a large bowl, stir together the condensed soup, sour cream, milk, taco seasoning and can of tomatoes until well mixed. Add in the chicken and 2 cup of the cheese and stir to combine.
  • Spread half of the crushed chips into the bottom of the prepared baking dish, then spread half of the chicken mixture, the rest of the Doritos, and then the rest of the chicken mixture. Add the remaining 1/2 cup cheese on top.
  • Cover the dish with foil.
  • Bake for 30 – 40 minutes. Garnish with cilantro if desired.

Notes

This dish is great served over some shredded lettuce and diced tomatoes.

    I made this for Christmas eve dinner since we do a Mexican meal. It was way to dry, way to many chips and I added extra chicken but that was not enough to help it. It sounds good but it was diffidently a FAIL for us !!!!1 star

    Delicious ! I did make some changes based on what I had in my pantry and personal tastes. Somehow I was out of Taco seasoning so subbed in 1/2 pkg of chili seasoning. We love onion in just about everything so I sauteed up 1/2 a diced onion & added it to the mix. Used 1/2 Doritos & 1/2 whole wheat tortilla chips. I also added about 1/4 cup of chopped cilantro to the mix as well. As suggested I served it over a bed of chopped iceberg lettuce & garnished with diced tomatoes & green onions. Such a nice blend of flavours. Thanks for another great recipe !

    This recipe was delicious and full of flavor. My 16 year old daughter helped me make it. We decided to add more cheese on top though. She felt 1/2 cup of cheese on top wasn’t enough for her. I’ve been sharing this recipe with everyone.5 stars
