Reader Review
This is the best recipe for cowboy caviar that I’ve found. The only thing I did differently was I used 1 tbsp of lemon, and one 1 tbsp of lime juice since I was running low on lime juice. Turned out great!

Karlynn’s Recipe Notes
- Skill Level: This recipe is so easy to make – even the kids can help with mixing and assembling!
- Total Time: Ready in just 20 minutes, Cowboy Caviar is perfect as a quick snack or as an easy side for your favorite mains.
- Variations: Swap the canned corn for roasted or grilled corn on the cob to add some smoky sweetness! You can also mix in a little cheese (like feta or cotija), extra add-ins like jalapeños, or even some chopped mango for a fresh, sweet twist. Serve your caviar with chips like a salsa, spread it on my Simple Crostini Recipe for a quick lunch, or pair it with Pulled Pork Sandwiches and Quesadillas for a more filling meal!
- Tools For This Recipe: You will need a knife for chopping, a colander, a large bowl, a lidded jar, and a spoon for mixing.

What You’ll Need for Ingredients
Beans: You’ll use a mix of black beans and black-eyed peas for a hearty, protein-packed base. Paired with sweet corn niblets, this creates the perfect balance of flavor and bite!
Vegetables: Red pepper, red onion, tomatoes, and fresh cilantro add pops of color and a great boost of nutrition. Karlynn’s Tip: Feel free to add more veggies as well. Try jalapeños for heat, extra peppers (like orange or green), shredded purple cabbage, or green onions!

Apple Cider Vinegar: Used in the dressing, apple cider vinegar adds a tangy, slightly sharp note that helps bring all the flavors together. When combined with the lime juice, it gives this dish its classic zesty taste!
Honey: Honey adds a touch of sweetness that balances the acidity from the vinegar and lime juice. Karlynn’s Tip: If you don’t have honey on hand, substitute it with a bit of sugar or another sweetener. Without it, the dressing can taste too strong!
Seasonings: A simple blend of salt, pepper, cumin, and chili powder gives the vinaigrette a bold, Tex-Mex-inspired taste that ties everything together beautifully!
How To Make Cowboy Caviar
This is a quick overview of the recipe. The full list of ingredients & complete step-by-step instructions are in the recipe card below.
- Prepare the veggies by opening the cans and draining the tomatoes in a colander for 5-10 minutes.
- Put all the vegetables and drained beans in a large bowl.
- In a lidded jar, add the dressing ingredients, cover, and shake to mix thoroughly.
- Pour the dressing over the veggie mixture, toss gently, and serve with tortilla chips.

Storage Instructions
Cowboy Caviar stores beautifully, so you can enjoy its fresh, vibrant flavors for days to come!
Refrigerator: Transfer your caviar to an airtight container and store it in the fridge for up to 4 days. The ingredients will continue to meld over time, making it even more delicious the next day!
Freezer: Freezing isn’t recommended here, as the fresh vegetables can lose their texture and become watery once thawed.
