Sliced Red Pepper & Feta Grilled Cheese Sandwich

Did you know that April 12th is National Grilled Cheese Day? In my opinion, the not-so-humble grilled cheese needs an entire MONTH where we celebrate it. From last-minute dinners to the only thing my daughter would eat when she was 4, the grilled cheese sandwich is a household staple for my family.

I’ve happily partnered with Dempster’s again to bring you some new recipes featuring their products, and this time it’s all about having a #Breadventure. Stepping out of your comfort zone and trying something new, being a little more adventurous than usual.

What better way to try something new than changing up your normal grilled cheese?

While this is not the craziest grilled cheese out there, adding red peppers and herb feta cheese is probably going to make your kids do a double take. This is definitely going to challenge their taste buds and expand their taste horizons.

Those two cute little twerps above can be adventuresome with their eating but tend to stick to the safe side of food. Perhaps I should say three, as my husband hadn’t even tried curry until he was 30 years old! Root Beer, being a dog, will eat anything, so he doesn’t count and we all know that I’m always up for a culinary adventure!

These red pepper grilled cheeses are perfect to make while you are out camping, which is what we are doing in the photo above. You can make them on the campfire easily and the ingredients are ones that are simple enough to take with you. Jazz up your campfire menu, all it takes is some different cheese and some red pepper!

Outdoor adventures and new food adventures as a family, what could be better?

I chose to make the red pepper and grilled cheese sandwich on Dempster’s white bread. There is something so nostalgic about a good, crispy white bread grilled cheese, it just takes me back to my childhood.

The herb feta is simply spectacular in this, and of course, you must have Mozza cheese as well, you need something to hold it together.

Take a gander at that sandwich.

That ooey, gooey deliciousness right there is why you need the mozza cheese as well as the feta cheese. This is the grilled cheese of your childhood, amped up for your adult tastes.

Red Pepper & Feta Grilled Cheese Sandwich, a great way to spice up your grilled cheese!

Ingredients
 

  • 8 slices of Dempster’s white bread
  • one red pepper cleaned and sliced
  • 1 tablespoon olive oil
  • 4 tablespoons herb feta cheese
  • 1-2 cups of shredded mozzarella cheese
  • butter

Instructions
 

  • Fry the red pepper in the olive oil until softened. Set aside.
  • Butter the slices of the white bread.
  • Place four slices butter side down in a frying pan on medium heat.
  • Sprinkle some mozzarella cheese on top, followed by strips of red pepper.
  • Place some cubes of feta on top, then add more mozzarella. Top with another slice of bread, butter side out.
  • Fry in the pan until each side of the bread is golden brown and the cheese has melted completely.
  • Remove and place on plates. Slice as desired and enjoy!

    We’ll try anything for once, except hot peppers my kids don’t love those. But I would pick, rye bread, buttered with cheddar, mozzarella and sauerkraut.

    Our #BreadAdventure would be everything and anything ! I love to get Bread creative with Bread Puddings either with English style Custard and lots of Vanilla or Soaked in Fruit. Of course Grilled Cheese with lots of Mustard is always a winner here.

    Sometimes my 2 kids are adventurous when it comes to food and sometimes they aren’t. My son loves grilled cheese sandwiches so I think I could make any kind and he would like it. My daughter isn’t a fan of grilled cheese sandwiches so I couldn’t get her to eat any kind. The one posted above looks amazing and I would certainly try that one.

    We are not really adventurous eaters, accept when it comes to cheese. We make grilled cheese with a wide variety of cheese but I always come back to a nice sharp cheddar with bacon as my favorite.
