If you are looking for a delicious St. Patrick’s Day cocktail, this Guinness-based float is exactly what you need. It’s delicious, minty, and full of flavor.
This drink’s combination of mint and maltiness works, giving it a great flavor profile. The ice cream begins to foam and combine with the head of the stout, giving it a malty, minty milkshake texture.
How to Make this Grasshopper Guinness Float
To begin making this drink, you’ll need two pint-sized glasses and the following ingredients:
- Guinness Beer (or another stout beer).
- Whipped Cream.
- Mint Chocolate Ice Cream.
- Chocolate Syrup.
- Chocolate Sprinkles.
Once you have the ingredients, split one can of Guinness between two glasses. This should fill them about halfway. Place a generous scoop of mint chocolate ice cream into each glass.
The drinks are topped off with another can, split between the two glasses, and topped with whipped cream, chocolate syrup, and chocolate sprinkles.
Serve with a straw, and enjoy!
You can use ANY stout beer.

Ingredients
- 2 cans Guinness or another stout
- 2 scoops mint chocolate ice cream
- 2 tbsp chocolate syrup
- 2 tbsp whipped cream
- 1 tbsp chocolate sprinkles
Instructions
- Separate the first can of Guinness into two glasses.
- Place 1 scoop of ice cream in each glass.
- Top each glass with the second can of Guinness split between the two.
- Top each glass with whipped cream.
- Drizzle with chocolate syrup and sprinkles and serve.

Yum yum! The Guinness Irish Stew is amazing! I think this is the 4th year I have made this recipe for St. Patrick’s Day along with your recommended garlic mashed potatoes and Irish Soda Bread. We loved them all! I made everything as the recipe states except I used freeze dried garlic because that’s what I had. Make sure to use the ingredients amounts called for in the recipe or the Guinness may be too strong. Only happened to me once, now I measure the beef especially. Not sure how to post a picture or I would.
