Chili Coconut Scallops Campfire Dinner

This month’s Blue Dragon post is seafood! Can you believe it?! I almost never do seafood recipes because I am the only one in the family who looooves seafood.

I can get Mike to eat shrimp, especially Buffalo Shrimp and now on a very rare occasion he will eat scallops.

This lead to me thinking of how I could do scallops in a delicious tin foil dinner while camping at the trailer.

These packs are easy, fast and seriously delicious. Coconut and chili is an amazing taste with scallops, indeed, you always win me over with anything coconut!

The other lovely thing about scallops and camping?

Take a frozen pack, use it to keep the other food cool on the way to the campsite and then by the time you are there they should be defrosted and ready to eat that night!

I hope that I’ve upped your camping food game now! Yes, scallops while camping!

I admit it, I’m a glamper when it comes to food and bevvies while I am out at the lake.

Now, Blue Dragon is running a contest on their Facebook page , make sure to go and enter! They are giving away a package full of East Made Easy goodies to 5 luck winners! Entrants must be a resident of Canada, otherwise anyone is welcome to enter!

Happy cooking!
