This Chili Coconut Scallops Campfire Dinner makes camping a lot easier! I almost never do seafood recipes because I am the only one in the family who looooves seafood. I can get Mike to eat shrimp, especially Buffalo Shrimp and now on a very rare occasion he will eat scallops. This lead to me thinking of how I could do scallops in a delicious tin foil dinner while camping at the trailer. These packs are easy, fast and seriously delicious. Coconut and chili is an amazing taste with scallops, indeed, you always win me over with anything coconut!
The other lovely thing about scallops and camping? Take a frozen pack, use it to keep the other food cool on the way to the campsite and then by the time you are there they should be defrosted and ready to eat that night!

Chili Coconut Scallop Campfire Dinner

Ingredients
- 2 cups of scallops
- 1 large red pepper
- 2 cups carrots
- 4 tablespoons butter
- 4 tablespoons sweet chili sauce
Instructions
- Divide all ingredients into four : place each portion onto 2 layers of heavy duty aluminum foil. Fold the foil to form a packet and seal shut. You will have four packets.
- Place on a campfire or BBQ and grill for 15-20 minutes, until everything is cooked.
- Remove and serve with rice, French bread or noodles!
