Add the balsamic vinegar and honey/syrup to a small pot. Bring it to a boil over high heat, then reduce the heat and simmer for 10-15 minutes. Stir occasionally until the sauce is thick enough to coat the back of a spoon.
Pour it into a small bowl and let it cool.
Caprese Skewers
Take a toothpick and thread a cheese ball onto it, followed by a basil leaf and then a tomato. ( the order doesn't really matter, but the basil should be in the middle.)
Place on a platter. Sprinkle with salt and pepper, then drizzle with the balsamic reduction.
Serve immediately.
Notes
You can add more tomatoes and cheese to skewers, play around with the amounts!
