Rich, chewy butterscotch bars are made with Rice Krispies and topped with a layer of chocolate, with butterscotch "tiger stripes" drizzled across the top. The perfect easy sweet treat.
In a medium-sized saucepan, combine the brown sugar, butter, and corn syrup. Bring to a boil over medium heat, stirring to dissolve the brown sugar into the mixture completely.
Remove the saucepan from the heat, add 1 cup of the butterscotch chips, and stir until melted.
Stir in the cereal until well-coated in the syrup mixture.
Turn out the mixture into the prepared pan, and gently press down on the top to even out the mixture and form bars.
Melt the chocolate chips in a microwaveable glass measuring cup in 30-second increments until smooth and melted completely. Spread evenly over the top of the bars.
Place the half cup of butterscotch baking chips and coconut oil in a microwaveable glass measuring cup and microwave for 20-second increments until smooth and melted completely. Watch carefully as the butterscotch chips can go grainy fast if overheated.
Drizzle the butterscotch mixture over the top to make the tiger stripes. Cool on the counter. Slice and enjoy once the chocolate has hardened.
