Mix the applesauce, egg yolk, honey, cinnamon and vanilla extract.
Add in the flour and mix until well combined.
The dough will be a bit sticky so roll it out onto a well floured surface and cut out what ever shapes you want for the cookies, making the dough about 1/8 inch thick.
Place all cut shapes onto parchment paper or non stick pan.
Re-roll the dough until all the dough is used up.
Mix the egg white and the 1/4 tsp of cinnamon very well in a separate small bowl.
Brush the tops of each cookie with the egg white mixture before baking.
Bake in the oven at 350 degrees for 20 minutes. They are done when the tops start to lightly brown. Let cool and dry for 1 to 2 hours for crunchy cookies.
Notes
Note: My cookies were very small (about 1.5 inch long biscuits) so they were totally cooked in the 20 minutes. If you make larger cookies or thicker they will take longer to bake.
