Fruity, savory, and just a little bit sweet, cranberry and Brie work together perfectly. Why not combine them into the perfect little savory snack or appetizer!
Prepare the brie and remove the rind from the cheese. Then place the brie in the freezer for about 20 minutes making it easier to slice.
using cooking spray, Oil a 24 cup mini muffin tin.
Lay out the puff pastry and roll it out to a 10 X 14 inch rectangle. Cut the sheet lengthwise into four strips and across into six strips. This should make 24 even squares.
Place each square into the greased muffin cups and press into the muffin cups.
Take the brie out of the freezer and cut it into 24 pieces making each piece about 3/4 inch in size.
In each pastry lined cup add 1 teaspoon of cranberry sauce, then press in one piece of brie and top it with the chopped pecans. Sprinkle each with sea salt.
Place the baking tray in the fridge for at least 30 minutes, but you can also prepare these the day before cover them with plastic wrap and keep them in the fridge for up to three days.
Preheat your oven to 400°
Bake the Cranberry Brie Bites for 18-20 minutes until they are golden brown around the edges.
