Instructions
Cream Cheese Pastry
Prepare one batch of cream cheese pastry
Strawberry Filling
In a medium saucepan mix the sugar, cornstarch, and salt with a whisk.
Stir in the apple juice
Cook over medium heat.
Stir constantly until the mixture is smooth and thick, about 3 minutes
Let it cool for 10 minutes.
Take your pre-baked tart shells and spread a small quantity of the glaze over the bottoms and sides of the shells
Take your washed and hulled fresh strawberries and arrange them in the tarts, slicing the berries to fit if needed
Spoon the remaining glaze over the berries in the tarts, covering them well
Place them in a covered container in the fridge until ready to serve.
Before you serve them, garnish with whipped cream on top if desired.
Notes
If you have any left over filling, it is delicious on ice cream or toast!
