With this recipe, you are going to need to add the ingredients slowly, adjusting to your own liking. Start with half the amount of horseradish, then add until you find it's perfect. Remember that it will mellow out some overnight, but not too much!
Add in the lemon juice and mustard to your liking as well. Then add the chives, salt and pepper and then combine everything well once you are satisfied with the taste.
Store in a closed container in the refrigerator for up to 3 days. The flavor improves with the longer it refrigerates.
Notes
If you find this sauce slightly "flat" add in a wee bit if sugar. Some prepared horseradish have more sugar than others.
This will yield around 11 tablespoons, each serving size is one tablespoon
