Preheat your oven to 450°F. Lightly grease a baking sheet with cooking spray or grease a wire baking rack inserted into a baking pan like shown.
In a large bowl, mix together the flour, cornstarch, milk, garlic powder, salt, and pepper together in a bowl using a whisk until batter is smooth and somewhat runny.
Add the cauliflower into the batter in the bowl and mix until the cauliflower is coated.
Spread the cauliflower out onto the baking sheet or place it on the wire baking rack.
Bake in the preheated oven until lightly browned, 15-17 minutes,
Melt the butter in a large microwave-safe measuring cup, then stir in the hot sauce and honey. Adjust to taste - you might want more honey or butter.
Remove the cauliflower from the oven and brush the hot sauce mixture over each cauliflower piece.
Bake in the oven again until the cauliflower is lightly browned, about 10 minutes.
Remove the baking sheet from the oven. Let cool slightly before serving.
Serve with Ranch or blue cheese dip, carrot sticks, and celery sticks.
Notes
The prechopped cauliflower in the bag (think the Costco ones) are the best to use for this recipe. The cauliflower slightly dries out in the package, which gives you a better result.
