Peel a 3 inch chunk of ginger and add to a pot on the stove.
Add 1/2 cup of honey and 1/2 cup of water to the pot.
Bring to a boil.
Remove from stove, strain and place in an airtight container in the fridge to cool.
Notes
If you want a stronger ginger flavor, leave the chunk of ginger in the airtight container in the fridge overnight instead of removing it and then remove in the morning.You can also sub in sugar instead of honey if desired (although it doesn't work quite as well).
