Maple Roasted Butternut Squash Goal Bowl - delicious and healthy, this roasted butternut squash is a great way to get your vegetables in first thing in the morning, but also makes a great meal anytime of the day!

Ingredients

2-3 pounds
butternut squash
peeled and chopped
1
tablespoon
olive oil
2
tablespoons
maple syrup
1/2
teaspoon
cayenne pepper
4
eggs
poached
salt and pepper
to taste
Instructions
Pre-heat your oven to 425 F.
Toss together the squash,oil,maple syrup and pepper.
Place on a large baking sheet and place into oven.
Roast for 30-35 minutes until softened, stirring every 10 minutes or so. The squash can get nice and browned!
Remove and top with poached eggs, salt and pepper them up and the enjoy!
