medium red onion
diced

olive oil

Cajun Seasoning

5 ounce
package of Kale/Chard/Spinach greens
4
large eggs
poached to desired doneness
2
tablespoons
Asiago/Parmesan Shredded Cheese Mix
to taste salt and pepper
Instructions
Heat the oil in a large skillet. Add the onions and the Cajun seasoning. Cook until soft.
Add the greens and cook until wilted.
Divide between two bowls.
Divide the cheese between the two bowls and place two poached eggs on top.
Salt and pepper to taste.
