Kick the tires and light the fires to 325 degrees.
Cream the butter and sugar, then add in your eggs.
Pour in the lemon juice, applesauce and lemon zest and mix them up as well.
Add in the dry ingredients. And it's ready. Now, my berries all sank to the bottom of the loaf as you can see in the picture above. Drives me nuts! It still tastes fine but it doesn't look as nice. I am all about looks. And I know the secret of rolling the berries in flour. They still sank. So what I would do is mix them in the top layer once it's in the pan. Then the little buggers can sink through it alllll they want.
I baked it low at 325 degrees until a knife inserted comes out clean, anywhere from 40-50 minutes. It makes a small loaf, just right for snacking!
