2½Lbsbeef ribs or 8 ribs(or 2 lbs chuck roast cut into even pieces)
1mediumonion(chopped)
2cloves garlic(diced)
1teaspoonblack pepper
1canbeer(or 1 cup beef broth)
1-2cupswater
Glaze
½cuphoney
¼cupvegetable oil
½cupbeer
1TablespoonDijon style mustard
Instructions
In a large pot add the ribs with the onion, garlic, pepper and beer. Add just enough water to cover the ribs.
Simmer the ribs for 40-45 minutes just until tender.
Meanwhile add all the glaze ingredients to a small pot and bring to a boil. Cook for about 5 minutes until the sauce thickens. Set aside.
Drain the ribs and place them on a foil lined baking sheet. Sprinkle them with salt and pepper and brush the ribs with a thick coat of the glaze.
Grill the ribs on the preheated barbecue for 10-15 minutes basting and turning frequently until desired crispiness. These can also be done in the oven broiling at 375° for 5-10 minutes to crisp them up.
