Over high heat add balsamic vinegar to a small saucepan and bring to a boil. Turn heat down to medium then simmer until vinegar is the consistency of thin maple syrup, about 20 minutes. When you can see the bottom of the pan for a second or two after scraping a spatula across it, it is done.
Pour it into a small bowl and let it cool. Set aside.
Caprese Skewers
Take a toothpick and thread a cheese ball onto it.
Then add a basil leaf - fold in half or into quarters if it is too large.
Then add a cherry tomato and place onto a serving platter. Repeat with remaining ingredients. Just before serving, sprinkle skewers with salt and pepper then drizzle with cooled balsamic reduction.
