Ingredients

sweet potato
(peeled and chopped)

sweet onion
(cut into wedges)

cloves
garlic
(sliced large)

olive oil

salt

tablespoon
balsamic vinegar
(Optional)
Instructions
Preheat the oven to 425 degrees °
In a medium large bowl mix the sweet potatoes, onion, and garlic.
Drizzle olive oil over the mixture and toss it well to coat; pour into a shallow roasting pan.
Roast the sweet potatoes in the oven for 30-35 minutes turning every 7-10 minutes so all sides are browning and the vegetables are soft.
Season with salt and pepper to taste.
For added tang try sprinkling balsamic vinegar over the vegetables.
Serve warm.
