Preheat your oven to 350 °F. Lightly grease a medium sized baking pan and set aside.
Prepare the pork chops by slicing the pork chop in half horizontally, making sure that you don't cut it all the way through. This will create a pocket for the stuffing. Season the pork chops with salt and pepper.
Heat the oil in a large skillet over medium-high heat. Place the pork chops in the pan and cook each side until browned, then remove and place the pork chops in the prepared baking pan, leaving space between each chop.
Add the butter to the already hot skillet and reduce the heat to medium. Add in the celery, onion, apple, and poultry seasoning. Sauté until the vegetables are tender, about 10 minutes.
Place the croutons into a large bowl, then stir in the hot vegetables. Add in enough chicken broth to soften the croutons. The stuffing should just come together.
Divide the stuffing between the pork chops. Fill the pocket in each pork chop, leaving extra stuffing sticking out.
Bake the pork chops for 25-30 minutes or until the internal temperature of the pork reaches 145 degrees °F when tested with an instant read thermometer.
Remove and serve.
