Mediterranean Chickpea Salad

This healthy Mediterranean Chickpea Salad is full of traditional Greek salad flavors, feta, tomatoes, cucumbers, olives and more!

  • 1 (15/16 ounce can) chick peas drained and rinsed
  • 1 pint grape or cherry tomatoes washed and halved
  • 1/2 cup pitted Kalamata olives drained
  • 1 large English cucumber washed and chopped
  • 1/4 red onion finely sliced into half rings
  • 1/2 green pepper washed, de-seeded and chopped
  • 1/2 cup cubed feta cheese
  • 1/4 cup olive oil
  • 2-3 tbsp our favorite Greek seasoning
  1. In medium bowl,combine the chick peas, tomatoes, olives, cucumber, red onion, green pepper and Feta cheese.
  2. Drizzle the olive oil on top and then sprinkle with Greek seasoning to taste.
  3. Refrigerate until serving, but this is best served within a few hours.
