This is a basic zucchini bread recipe that includes raisins.

  • 3 cups all-purpose flour
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 cup raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup sour cream
  1. Preheat oven to 350 degrees F.

  2. Grease two 9x5-inch loaf pans.
  3. Beat together eggs, sugar, and oil. Blend in grated zucchini, and then the sour cream.

  4. Mix in flour, baking powder, soda and cinnamon.

  5. Stir in the raisins.

  6. Pour into greased pans.

  7. Bake in preheated oven until a tester inserted in the center of each loaf comes out clean. This should take around 80 minutes or so.

  8. Cool on wire rack.
Recipe Notes

You can sub the raisins for chocolate chips if desired.
