Instructions
Place the chicken broth into the bottom of the Instant Pot then place the chicken breasts on top of the liquid. Make sure that you have enough liquid that the chicken breasts are mostly covered. We are poaching the chicken!
Place the lid on according to the manufacturers directions.
Turn the valve on top to sealing.
Press the manual high pressure setting or Pressure cook (depending on your model for the wording) and set the time to 8 minutes for small/medium chicken breasts, 10 minutes for large.
Once the time goes off and the pressure cooking is done, let the Instant Pot naturally release the pressure. The timer will sound when you can safely open the lid. Follow the manufacturer's instructions for natural release.
Remove the chicken breasts to a plate and let rest for 5 minutes.
Shred the chicken breasts and add in as much of the broth from the pot as needed and serve.
Notes
ALWAYS follow the instructions from the manufacturer, even if my recipes contradicts the method in case methods have been updated. The larger the chicken breasts the longer they will take to cook. Make sure to let the pressure release naturally as it ensures that the chicken is cooked properly. Chicken breast needs to be cooked to a temperature of 165 °F to be safely eaten.
