1 15/16ouncescan of mixed beans rinsed and drained
4cupsof washed shredded kale
2-3tablespoonsfinely diced red onion
Salad Dressing:
1teaspoonslemon zest
1tablespoonsEuropean style mustard like Brassica mustard with whole mustard seeds
1/2teaspoongarlic herb seasoning
2tablespoonsfresh lemon juice
2tablespoonsolive oil
1teaspoonhoney
Instructions
In a large bowl, add beans, kale and onion.In a small measuring cup, combine the remaining ingredients, whisking together thoroughly.
Pour over the kale and beans. Mix in completely, covering all the salad.
Place in the refrigerator for at least half an hour before serving. You can let this sit for a few hours while the dressing softens the kale leaves, the longer the better!
