Delicious ham and black bean soup. Ignore the fact that it's pretty ugly, it's healthy, hearty and was a hit for dinner. Just close your eyes and eat it.
Combine all ingredients into your crockpot and cook on low for 8-10 hours. Alternately, place into a large soup pot and simmer on low heat until the vegetables are cooked through.
Remove the ham bone and any other small pieces of bone that might have fallen off.
Puree some of the soup mix with a hand blender to make a thicker broth.
