  • Skill Level: This is a very easy recipe, both to prepare and to clean up after.
  • Total Time: Making this tomato bisque will take you approximately 60 minutes from start to finish.
  • Variations: Use different varieties of canned tomatoes for chunkier bisque, or puree it to make it even smoother. Try a coconut cream or coconut milk in place of dairy. Add more dried or fresh basil. Try a sprinkle of cilantro or oregano.
  • Tools Needed: For this recipe, you’ll need a large pot, a mixing spoon, a garlic press, a cutting board, and a knife. A can opener and some small bowls will also come in handy.

What You’ll Need For Ingredients

Tomatoes: Because this is a tomato bisque rather than a full on tomato soup, the recipe calls for canned, crushed tomatoes. Any variety of peeled and canned tomatoes, as long as they’re peeled, will work. Crushed will work best for the texture of this recipe, but you can always use an immersion blender to smooth out the soup.

Cream: Though the recipe calls for heavy cream, you can absolutely substitute with a lower fat option. Even milk will be fine, you just won’t get the same level of creaminess.

Garnish: Cheese croutons or garlic croutons will work best for this. You want them as crunchy as possible to sprinkle on top of the bisque. You can buy some or make your own. Dry parsley is great for adding some colour right before serving, and a drizzle of cream right on top of each individual bowl will make everything look extra fancy.

How To Make Tomato Bisque

  1. In a large pot over medium heat add the butter, onion, celery, salt, pepper and basil. Sprinkle in flour, stir, and then cook for about 5 minutes. Add garlic and stir for 30 seconds.
  2. Add broth, tomatoes, and sugar. Lower heat and simmer for 30 minutes. Stir occasionally.
  3. Remove from heat and add heavy cream. Mix well.
  4. Garnish with croutons, parsley, and a drizzle of cream (if desired).

Karlynn’s Tips and Tricks for Making Tomato Bisque

Red Pepper: Get some roasted red pepper in there to add even more depth to the flavour profile. There’s a reason that red pepper and tomato go together as ingredients in so many soups and seasonings! You can do this by adding a seasoning blend that includes red pepper, or simply by adding some chopped red peppers to your onions at the beginning of this recipe.

Next Level: If you want to REALLY get epic flavour from the combination of onions and peppers, try frying your onions with some red peppers before making this bisque. Cook them in a small pan at low heat for as long as it takes for them to soften and caramelize. You could even use some bacon fat to fry them in, for a hint of bacon flavour.

Fresh Herbs: Dried herbs are absolutely wonderful to have around, and they pack quite a punch with just a tiny amount. But, if you can, grab some fresh ones for this recipe. Basil leaves, cut or snipped into little ribbons, add a pop of colour and bright flavour when used as a garnish. Cilantro, oregano, and parsley all provide similar benefits.

Storage Instructions

Fridge: Once the soup cools, you can store it in a sealed container in the fridge for 4-5 days.

Freezer: After it’s cooled, you can store this soup in the freezer in a sealed container for several months.

Tomato Bisque

Ingredients 

  • 2 Tablespoons unsalted butter
  • ¾ cup yellow onion, (diced)
  • 2 stalks celery , (diced)
  • 2 Tablespoons flour
  • ½ teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon basil
  • 3 Tablespoons garlic minced
  • 4 cups chicken broth
  • one 28 oz can crushed tomatoes
  • 2 teaspoons white sugar
  • 1 cup heavy cream
  • ¾ cup cheese or garlic croutons

Instructions 

  • In a large pot over medium heat add the butter, onion, celery, salt, pepper and basil. Sprinkle the flour over and stir and cook for about 5 minutes until the onions are translucent.
  • Add in the finely minced garlic and stir an additional 30 seconds, just until the garlic gets fragrant, then add in the chicken broth, tomatoes and sugar.
  • Lower the heat to a simmer and cook for 30 minutes.
  • Use an immersion blender until it is smooth.
  • Return the bisque to the heat for another 10 minutes, stirring occasionally.
  • Remove from heat and add in the 1 cup of heavy cream, mix well.
  • For garnish add several croutons to the top of the bisque with a sprinkle of parsley. You can also add more heavy cream to the bisque if you prefer.

Notes

If you like a super smooth bisque, you can strain the soup before serving.
