Roasted Green Beans

Green beans have a bit of a reputation as being only reserved for holidays and are popular for Thanksgiving recipes and Christmas recipes. However green bean season is in the summer, so it’s the best time to enjoy them fresh!

As long as you trim them properly and don’t overcook them, green beans work brilliantly as a side dish for basically any meal you can imagine.

The key is to not cook them too much – you still want them to have plenty of that fresh green bean snap. This recipe makes it easy to make quick and easy green beans that will liven up any main dish.

Roasted Green Beans Ingredients

A note about the garlic, I tend to double or triple the amount in my own recipes and post a less “Ukrainian” recipe, as I personally can handle (and enjoy) very garlicky dishes. You can adjust the garlic in this as you see fit for your personal tastes! The actual amounts are in the recipe card, this is just a quick list.

  • Fresh green beans
  • Olive oil
  • Garlic
  • Salt & pepper

How To Make Roasted Green Beans

  • Spray a rimmed baking sheet with cooking spray
  • Lay out the green beans in a single layer on the sprayed pan
  • Mix together the oil, salt, pepper, and garlic in a small bowl
  • Drizzle the mixture all over the beans, and then toss them to coat them evenly
  • Bake at 425 Fahrenheit for 15 minutes, or until they are tender and lightly browned
  • Season to taste and enjoy

How to Trim Green Beans

The only prep with green beans is trimming them before you can cook them, that’s it!

It’s totally not as annoying and time-consuming as most people expect. The key trick is to separate your green beans into amounts that can easily fit into your hand. Once separated, line them up in a single line on your chopping board.

Holding the green beans lightly, tap the end of the beans firmly with your knife to try and get the green beans’ ends to line up. Once they are all level with each other, you can make one single cut to take off the tips easily.

Once cut, flip the green beans and do the same to the other side, and then repeat the process on the rest of your green beans.

How To Cook Green Beans Properly

One issue with cooking green beans is accidentally overcooking them. While many vegetables can be very forgiving when it comes to overcooking, green beans are particularly fussy.

If you take them too far, then the green beans will turn mushy and unpalatable. If you don’t cook them enough, however, they remain a bit woody in texture and don’t sweeten up.

The time given in this recipe, 15 minutes at 425 Fahrenheit, is the rough ballpark you want to shoot for, but make sure you are still actively checking on them the whole time they are cooking.

Test them with a fork – the fork should slide into the green beans easily while still being able to provide a little bit of resistance and not fall off of the fork at all.

Make sure you don’t burn the garlic either – if there are any exposed pieces of minced garlic on the tops of the green beans, make sure to mix them up with the beans to coat them with the oil to avoid any unpleasant, bitter browning.

Ingredients
 

  • 2 pounds fresh green beans washed and ends trimmed
  • 3 tablespoons olive oil
  • 1 tbsp minced garlic
  • 1 teaspoon sea salt or to taste
  • ½ teaspoon freshly ground black pepper

Instructions
 

  • Preheat the oven to 425 °F
  • Spray a rimmed baking sheet (jelly roll pan type) with cooking spray then set aside.
  • Place the green beans in a single layer on the sheet pan.
  • In a small bowl, mix the oil, salt, pepper, and garlic.
  • Drizzle the mixture over the green beans, then toss to coat the beans evenly.
  • Bake in the oven for 15-20 minutes or until the green beans are tender, slightly shriveled and lightly browned.
  • Season again with salt and pepper to taste if desired and serve.
