Roasted Garlic Asparagus With Sorvrano Cheese

Simple roasted garlic asparagus is a family favourite around this household and indeed, a staple on our table not only in the spring, but year round. The beauty to roasted asparagus is that in the summertime you can make it on the BBQ instead of turning your oven on. And roasted garlic is always a good idea!

My Uncle Bob was the first person to introduce me to grilled asparagus and garlic, straight from his BBQ when Mike and I visited him in Winnipeg.

Before we were married. Can we say eons ago?

So needless to say, roasted asparagus has been on our supper table for well over a decade now, with it either being done in the oven or on the BBQ.

 All you need is:

  • trimmed and washed asparagus stalks, approx. one bundle
  • 2 minced garlic cloves
  • 2 tbsp olive oil
  • shredded Sovrano cheese
  •  a foil lined baking sheet (if you are using the BBQ, make sure it’s a sheet that fits inside!

Place the asparagus on the baking sheet, then sprinkle the garlic over the top evenly. Drizzle the olive oil over the top.  Cook in a 400 degree oven or BBQ, turning to make sure they don’t burn or stick. When they are your desired texture – we like ours a little crispy still- remove.

Sprinkle the shredded Sovrano cheese on top.

The cheese makes these just about perfect, adds a little protein for my son who we are always trying to get protein into and adds another flavour dimension to it, just that little extra “zing” that you need to dress it up.

What are your favorite ways of cooking asparagus? This is most certainly my favorite, but steamed inside an omlette comes a close second!

    I have never heard of this kind of cheese – thought I had heard of them all.. well, all in this neck of the woods. There is nothing like roasted asparagus. We just love it with s and p – well, unless it is roasted asparagus wrapped with prosciutto di parma

      ACanadianFoodie Nope, nothing like roasted asparagus, the kids eat it like candy and we never get tired of it. Sovrano is nice,made with buffalo milk/cows milk and is slightly milder than Parmesan. Even the little Rose likes it!
