Red Velvet Pancakes

Who doesn’t love the surprisingly rich and flavorful taste of red velvet cake? Well, it doesn’t have to just be only a dessert – why not have it for breakfast?  The trick with this recipe is to use a good red velvet cake mix batter and top it with some gorgeously delicious cream cheese icing. Thanks to the premixed cake mix, it is so easy to whip up on a weekday morning.

Red Velvet Pancakes Ingredients

• Red velvet cake mix

• All-purpose flour

• Milk

• Eggs

• Oil

• More oil for greasing

Cream Cheese Icing

• Cream cheese

• Butter

• Icing sugar

• Vanilla extract

• Cream (or milk) 

How To Make Red Velvet Pancakes

• Combine all of the ingredients into a large bowl, mixing until all the lumps disappear

• If the batter is too thick, add more milk

• The batter should still be spreadable, though, thinner than a normal pancake batter

• Preheat your griddle to a medium-high temperature

• Measure out ¼ cup sized scoops of pancake batter and cook until browned on the bottom slightly and flip and cook until the other side is done

• Combine the cream cheese icing ingredients together using beats, adapting with more milk and cream as desired

• Serve the pancakes topping with the cream cheese icing, or even some syrup as well!

Why Use a Cake Mix Instead Of Making It Yourself?

A lot of people consider using a cake mix in any sort of recipe as something of a cheat, as if using a cake mix somehow makes you less of a chef.

Well, don’t listen to them! Cake mixes aren’t just super convenient and cheap; they are basically the best possible way to make cakes. The people who make cake mixes are smart and spend millions creating the absolute best recipe for their box cakes.

Sure, you could spend hours upon hours carefully mixing and preparing a red velvet cake mix from scratch, but the better thing to do would be to just buy a simple cake mix and add that instead.

The only thing to keep in mind with using a cake mix is that you really need to mix it thoroughly. The air bubbles that get incorporated as you mix a box cake mix really help to improve its texture, which is why the typical box instructions mention to really vigorously mix it until everything is combined and it is light and airy.

How To Know When To Flip Your Pancakes?

Pancakes are one of the best breakfast recipes there are and have been for countless generations as not only a cheap way to start the day but also easy to prepare as well.

However, there is one problem with making pancakes at home: knowing when to flip them.

Everyone has burnt pancakes at home or otherwise accidentally massively undercooked one side, resulting in a wet and sad texture.

The secret to flipping pancakes and getting them cooked properly is to use the right heat setting. Though everyone’s stove is different, you should aim for a hair above medium heat on your widest burner.

Secondly, keep an eye on your pancakes! Once a few bubbles start popping in the center, you should get your spatula ready.

As soon as the bubbles have spread around the edge of the pancake, and you see the very edge of it begin to dry out a bit, give it a flip. You should find that your pancake is perfectly browned! Excepting, of course, the first batch of pancakes, which everyone knows is the official “test” batch that the chef gets to enjoy.

Ingredients
 

Red Velvet Pancake Ingredients

  • one package of red velvet cake mix
  • 1/2 cup all purpose flour
  • 1 1/2 cups milk
  • 2 eggs
  • 2 tablespoons oil
  • oil for greasing the pan

Cream Cheese Icing

  • 1/2 package of cream cheese
  • 1/4 cup of butter
  • 1 cup of icing sugar
  • 1/2 teaspoon vanilla if wanted
  • 2-3 tablespoons cream or milk

Instructions
 

  • Combine all ingredients into a large bowl, mixing until all the lumps disappear. If the batter is too thick, add more milk. The batter should be just spreadable, unlike normal pancake batter, and not runny.
  • Heat a griddle to a medium high temp.
  • Using a 1/4 cup scoop, measure out enough pancakes to fill the griddle.
  • Cook until browned on the bottom slightly and the edges are cooked. Flip and cook until the other side is done.
  • Combine the cream cheese icing ingredients together using beaters until creamy. Add more milk or cream until desired thickness is achieved.
  • Serve with cream cheese icing or syrup!
