If you are lucky, you have some Saskatoons right now in your kitchen. ‘Tis the season for those lovely purple berries and time to bake with them! As much as I do love them fresh, sometimes you just want them in a muffin or loaf.Or just make a lemon cake.

And since I love lemon, I put them in a basic lemon loaf.

And for once I tried to make it a little healthier, something I rarely do. I used applesauce instead of oil and this resulted in a very dense, but still tasty, loaf.

Ingredients Needed:
1 1/2 cups of flour
1/2 tsp baking soda
1 tsp baking powder
3 eggs
1 cup of sugar
3 tbsp butter
3 tbsp lemon zest
1/2 cup of lemon juice
1/2 cup applesauce

Kick the tires and light the fires to 325 degrees.

Cream the butter and sugar, then add in your eggs.

Pour in the lemon juice, applesauce and lemon zest and mix them up as well.

Add in the dry ingredients.

And it’s ready.

Now, my berries all sank to the bottom of the loaf as you can see in the picture above. Drives me nuts! It still tastes fine but it doesn’t look as nice.

I am all about looks.

And I know the “secret” of rolling the berries in flour.

So what I would do is mix them in the top layer once it’s in the pan.

Then the little buggers can sink through it alllll they want.

I baked it low at 325 until a knife inserted comes out clean, anywhere from 40-50 minutes. It makes a small loaf, just right for snacking!

Ingredients

    I would like to make the lemon Saskatoon loaf with blueberries. However, there are to berries listed in the ingredients. How much should I use?

    Looks good, I found a stray pint of blueberries in the fridge today that I just may use for this.
