These amazing eggnog cookies basically taste like Christmas. They are soft, deliciously spiced Christmas cookies that would be perfect for your Christmas cookie exchange this year! Make them ahead of time and then freeze them until the big day!

Eggnog Cookies

This eggnog cookie recipe has been updated with new photos this year and is from 2013! Six years ago!!! We were out at a Fairmont event many, many years ago and ran into friends of ours. Over the course of a few drinks I proceeded to whine about how busy this season is for me, that out of all of the holidays of the year, Christmas is the most crazy for me – as you saw in my Food Blogger Confessions post, What Christmas Baking Really Looks Like in my House.) Then, being the sweetie that she is, Kari offered to guest post on my site with her famous Eggnog Cookies recipe.

Kari is most likely one of the busiest people I know in Edmonton, running her popular lifestyle blog Kari Skelton, because with that territory comes events, charities, shows and so much more that she has to take on as well. She can always be found supporting Edmonton’s causes – and apparently in 2013 I was one of her causes LOL! When she offered to guest post her cookies I totally took her up on her offer, with only a slight twinge of guilt over adding to her To Do List that year.

Now both Kari and I have vastly improved our photography over the past 6 years, and she has these eggnog cookies up on her website as Rose Gold Eggnog Cookies. They are utterly GORGEOUS and if you made those for your cookie exchange you’d be the Queen of Cookies, I kid you not!

My daughter and I baked these up for new photos and my daughter insisted that we needed to put Christmas sprinkles on top. You can add any sprinkles or edible sparkles that you want, or even a smidgen of nutmeg  dusted on top if you don’t add it to the glaze. Just make sure to add the topping right after you glaze them so that they set into the glaze.

Eggnog Cookie Tips and Tricks

  • They are relatively easy to make, but I think the secret is to NOT over mix them when you add the flour to the wet mixture.
  • Don’t over bake them either, as you want them to still be a little chewy.
  • You can add some nutmeg to the glaze, I am a nutmeg freak! I love it!
  • These can be frozen a few weeks ahead of time. Simply place them into a sealed freezer safe container and if you layer them make sure to put waxed paper or parchment between the layers.

The only thing better than an Eggnog Cookie is dipping an Eggnog Cookie into a glass of Eggnog.  These are my favourite to make at Christmas because they are unexpected, aesthetically pleasing and delicious!

Kari Skelton's Eggnog Cookies

These eggnog cookies are the perfect Christmas cookie! They are soft, delicious and are topped with the most delicious eggnog icing glaze!

Ingredients
 

  • 1 1/4 cups white sugar
  • 3/4 cup butter softened
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 2 egg yolks
  • 1 teaspoon ground nutmeg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon

Eggnog Glaze:

  • 1 1/2 cup powdered sugar
  • 3 tablespoons eggnog

Instructions
 

  • Preheat oven to 300 degrees F
  • Combine flour, baking powder, cinnamon and nutmeg.
  • Cream sugar and butter until light.
  • Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth.
  • Add flour mixture and beat at low speed until just combined. Do not overmix.
  • Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart.
  • Sprinkle lightly with nutmeg.
  • Bake 15-18 minutes until bottoms turn light brown.
  • While cookies are in the oven,make the eggnog glaze by whisking together the powdered sugar with the three tbsp of eggnog. I sometimes make the icing the night before.
  • Let cookies cool for five minutes, glaze and sprinkle with cinnamon.
  • Place in the fridge for 15 minutes to harden the icing a bit.

Recipe Notes

  • adding a pinch of nutmeg to the glaze is my favorite addition
  • if you make the cookies larger, bake them 20-22 minutes
