- Skill Level: This is a very easy recipe.
- Total Time: Making this salad will take you just 10 minutes, even less if you’ve got your dressing premade.
- Variations: If you make your own dressing for this salad, you get to control how much garlic you add, so go nuts. Skip the anchovy paste if you’d like. Use all kale instead of half kale-half romaine. Add even more colour and nutrition with some finely chopped bell peppers.
- Tools Needed: For this recipe, you’ll need a large bowl, some salad tongs, a small bowl or jar and immersion blender or a blender.

What You’ll Need For Ingredients
Greens: While you can absolutely go ahead and make this salad entirely with kale, I mixed it with romaine lettuce for this recipe to help reduce the bitterness. If you love kale, go right ahead and skip the lettuce.
Dressing: The recipe and instructions for a homemade Caesar dressing are including in the recipe card, but you can absolutely use a storebought version. This homemade dressing will definitely take the flavours u a notch though.
Toppings: Croutons and cheese, obviously! Use whichever croutons you like best. Seasoned or plain, sourdough, homemade…whatever you want. Parmesan comes in many forms, so try a few, or experiment with other hard cheeses.

How To Make Kale Caesar Salad
This is a brief overview of the recipe. The full list of ingredients and step-by-step instructions are in the recipe card below.
- Mix the dressing ingredients in a blender or in a bowl with an immersion blender.
- Put lettuce and kale in a large bowl. Add dressing and toss until fully coated.
- Sprinkle on the parmesan and croutons but don’t mix them in until just before you serve the salad.

Storage Instructions
Once this salad is dressed, it won’t keep well in the fridge, so eat it while it’s fresh. You can, however, make a batch of the homemade Caesar dressing and keep that ready in the fridge for the next time you’d like to make this salad.

Kale Caesar Salad
Ingredients
Homemade Caesar Salad Dressing
- 1 tablespoon minced garlic ,
- ¾ cup full fat mayonnaise
- 3 teaspoons anchovy paste
- ⅓ cup grated Parmesan cheese
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice or more to taste
- salt to taste
- ground black pepper to taste
Caesar Salad Ingredients
- 4 cups romaine, washed, and torn into bite-size pieces
- 1-2 cups homemade garlic croutons, see post above for the recipe
- 4 cups kale, chopped, fresh
- ⅓ cup Parmesan flakes
Instructions
How to Make the Caesar Salad Dressing
- Combine all of the ingredients into a container that you can use an immersion or hand blender in to mix the ingredients. Alternatively, you can place this all in your blender.
- Process and blend all of the ingredients together, adding in more garlic and lemon to taste if you want. ( I am Ukrainian so there is always room for more garlic!) Set aside
Assembling the Kale Caesar Salad
- Place the lettuce and kale in a large bowl.
- Toss with the dressing until it is all coated completely.
- Top with the croutons and the Parmesan. I do NOT mix it in because as you know, they all go to the very bottom!
- Right before serving, mix the toppings into the top layer of lettuce and kale, not the bottom, just slightly so that you have a layer of toppings for everyone to dig into.
