What You’ll Need for Ingredients

Tomatoes: You can use pretty much any kind of tomato when it comes to making bruschetta, as long as they have a strong, fresh flavor! While this recipe uses small cherry tomatoes, any variety will work so long as you dice them up into easy-to-eat pieces! Karlynn’s Tip: If you are a gardener and can grow tomatoes in your climate, nothing beats fresh, homegrown tomatoes picked right off the vine!

Baguette: Honestly, the specific type of bread you use in this recipe doesn’t really matter, as it’s going to be toasted and topped with a heaping pile of flavourful ingredients! Stick to using your favourite baguette from the supermarket, or whatever is the easiest to get a hold of so long as it toasts up really well and tastes good enough to eat on its own.

Extra Virgin Olive Oil: Even though a good extra-virgin olive oil can be a bit expensive, it’s best used as a finishing oil or cold dishes like this one rather than for cooking, so you won’t be using a lot of it at a time. A good extra-virgin olive oil adds a peppery, citrusy taste to dishes like this one that turns the simple ingredients into something really special!

Balsamic Vinegar: A high quality balsamic vinegar can be a little pricey, but it brings a rich, complex sweetness and mellow tartness to dishes that really highlights the fresh taste of fruits and vegetables!

How To Make Cherry Tomato Bruschetta

  1. Preheat your oven to 400°F. Slice the baguette into rounds.
  2. Brush both sides of each slice of baguette with oil. Place on a large baking sheet and toast until golden, 5 to 10 minutes, turning halfway.
  3. In a medium bowl, toss tomatoes, basil, Parmesan cheese, and garlic. Mix in balsamic vinegar, olive oil, kosher salt, and pepper.
  4. Refrigerate tomatoes in a covered bowl for a minimum of 30 minutes, then spoon over toasted bread slices and serve.

Karlynn’s Tips and Tricks for the Perfect Cherry Tomato Bruschetta

  • Keep It Crispy: The best way to avoid soggy bread is to top your toasted baguette with the tomato mixture right before serving! If you’re planning to serve your bruschetta as a canapé, apply a thin layer of olive oil to the toasted baguette as they come out of the oven—this will help create a barrier between the bread and tomato mixture that will keep your bread crisp longer.
  • There’s the Rub: If you want a little extra garlicky goodness, take a peeled clove of garlic, cut it in half, and rub the cut side on your toasted baguette slices. This will grate a little extra garlic right into the bread for an added punch of flavor!

Storage Instructions

The bruschetta topping comes together so quickly and has so few ingredients that it’s best to make when you need it!

Refrigerator: You can make the tomato topping up to 2 days in advance and store it in the fridge in an airtight container. Leftover tomato topping can be stored in an airtight container in the fridge for up to 5 days. When you’re ready to eat it, toast up some fresh bread and enjoy!

Freezer: I don’t recommend freezing the tomato mixture, as it will negatively impact the texture.

Ingredients 

  • 1 baguette, (cut into 1/4-inch slices)
  • 1 Tablespoon extra-virgin olive oil
  • 2 cups small cherry tomatoes , (multicolored cut in half)
  • cup chopped fresh basil
  • 1 ounce Parmesan cheese, freshly grated
  • 2 cloves garlic, (minced)
  • 1 Tablespoon balsamic vinegar
  • 2 teaspoons extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions 

  • Preheat your oven to 400°.
  • Slice the baguette and brush both sides lightly with oil and place on large baking sheet. Toast bread until golden, 5 to 10 minutes, turning halfway through.
  • In a medium bowl toss the tomatoes, basil, Parmesan cheese, and garlic.
  • Mix in balsamic vinegar, 2 teaspoons olive oil, kosher salt, and pepper. Toss gently to coat well.
  • Refrigerate in a covered bowl for a minimum for 30 minutes.
  • Spoon tomato mixture onto toasted bread slices and serve.
