Fajitas are one of those things that most of us only ever get to enjoy when eating out.

Traditionally served as a build-your-own fajitas feast, restaurants serve up an impressive platter of tortillas, meat, dips, and toppings, which would give you the impression that it would require far too much effort to recreate such a feast at home.

However, with this super quick and simple crockpot chicken fajita recipe, you don’t have to spend hours in the kitchen in order to enjoy all of the fun of fajitas!

Is It Worth Making Your Own Fajita Mix?

Fajita seasoning mixes are one of those things that most people think they have to buy as they would never get it right if they tried to make their own. However, a quick look at the ingredients of your favorite fajita mix will surprise you.

Most of the ingredients that go into a fajita mix are probably things that you already have in your kitchen and that you confidently use all of the time when cooking other dishes.

All you really need to make your own fajita mix is cayenne pepper, garlic powder, cumin, paprika, salt, pepper, and your favorite chili powder.

There is no magic ratio as to how much of each ingredient, though. In fact, one of the best things about making your own seasoning blends is that you get to adjust the quantities of each ingredient to suit your own taste.

So, rather than reaching for a packet of fajita mix why not have a go at making your own? You really can’t go wrong!

To save time, you can even back a large portion of fajita seasoning and store it in a glass jar so that it is ready to use when you want to make a quick meal.

Could You Use Chicken Thighs Instead?

Chicken breasts are known for being one of the healthiest meat options available and this is one of the main reasons they are used in so many recipes.

However, while chicken breasts might be low in fat and high in protein there is a trade-off. Chicken breasts are not the most flavorful part of the bird and are also the easiest to overcook, resulting in a chalky texture.

When it comes to juicy texture and a richer flavor, chicken thighs win every time. So if you’re not worried about the extra calories you might want to consider using chicken thighs in your fajitas in place of chicken breasts.

Thighs will get you a much softer and juicy chicken when you bite into your fajitas. You will also notice the taste of the chicken through the seasonings and salsa more than you would with chicken breasts.

Just like with chicken breasts you want to make sure that your thighs are skinless and boneless. You can normally find boneless skinless thighs in stores, or you can remove both yourself if you can only find the bone-in option.

Extras To Serve alongside Your Chicken Fajitas

Fajitas are meant to be a fun meal where you get to build your fajitas at the table rather than being served a meal that is ready to eat. Each person gets to create their fajitas to suit their own taste, making the sides that you serve even more important than with any other Mexican-themed dish.

When serving build-your-own fajitas you want to give your dinner guests as many choices and ways to customize their fajitas as possible.

Here are some of the classics you might want to serve alongside your chicken fajitas.

You can’t go wrong with a giant dish of guacamole served alongside your fajitas. Everyone loves guacamole, whether they use it as a dip or spread a layer on the inside of each fajita.

You could just buy ready-made guacamole from the store to cut back on prep time but if you have an extra ten minutes to spare it really is worth making your own.

Other than the avocados you probably already have everything in your kitchen that you need to make quick guacamole and it really is one of those things that once you’ve tried you won’t be able to go back!

  • Seasoned Sour Cream

Sour cream is a must when serving fajitas.

However, the only thing better than sour cream is seasoned sour cream, and since you already have Mexican seasonings on hand, why not make your own to serve with your fajitas?

Just add a little of your fajita seasonings mix to your sour cream along with a squeeze of lime and a dash of your favorite hot sauce and you have the ultimate fajita dip!

  • Shredded Cheese

When you order fajitas at a restaurant, they almost always come with a side of cheese for you to add to your fajitas as you build them.

It is best to serve cheese on the side, though, rather than in the actual fajitas, so that you can adjust the quantity in each one as you eat it.

The easiest option is to buy pre-shredded cheese and serve it on the side.  Alternatively, you could make your own shredded cheese blend using blocks of several cheeses and seasonings for even more variety!

Ingredients
 

  • 4 skinless boneless chicken breasts
  • one large white onion
  • 1 tablespoon butter
  • 1 225 ml jar of salsa your choice of heat,
  • 1 package of your favorite fajita seasoning mix
  • 2 tablespoons lime juice
  • 1 teaspoon white sugar

Instructions
 

  • Place chicken in the bottom of a crockpot.
  • Sautee the onions in the butter in a medium skillet until browned and soft. You want to brown them to get the best flavor possible.
  • Place onions on top of the chicken,
  • Combine the last four ingredients together and pour over the chicken and onions, covering it all nicely.
  • Cook on high for 4 hours or low 6-8 hours, until the chicken shreds nicely.
  • Serve on tortillas garnished with sour cream, cheese and cilantro.
