Truth time: I didn’t think this Cream of Chicken and Cauliflower Soup was going to be that good. I knew that it was going to be edible, as I’m not usually that bad of a cook.

However, I didn’t think it was going to be really, really good, which was a massive surprise to me! Even bigger a surprise is the fact that Mike absolutely loved this soup. Little did I know that he loves soups that are loaded with punch-you-in-the-mouth, over-the-top chicken flavor, so apparently I should have been making homemade Cream of Chicken soup all along as well. That will come another time, as for now, the weather is improving here in Alberta and the time for soups is nearly gone.

Who am I kidding, we just broke records for the warmest day in April EVER ( reaching plus 28 Celsius on one day) and this week has been back down to almost freezing, with rain and wet snow.

Ah, life in Alberta. Winter and summer in the span of a week. Soup season here is whenever the heck you feel like it!

 Cream of Chicken and Cauliflower Soup  Topped with Shredded Cheese and Parsley

This soup was seriously easy, fast, and anything that has an entire head of cauliflower as the base is fabulous in my books. This is one protein and vegetable-packed soup!

To puree it or not is up to you. I knew that my daughter would prefer chunks of cauliflower (her favorite vegetable) and chicken (her favorite protein) instead of a smooth soup, so I removed a bowl for her as it was before I used my immersion blender. You don’t need any flour in this soup, the cauliflower and chicken once pureed make this a smooth, fairly thick, and delicious soup to eat.

So now I’ll have to perfect a cream of chicken soup, finding out after only 15 years of marriage that my husband likes it. Seriously. How does that even happen?

Cream of Chicken and Cauliflower Soup

Ingredients
 

  • 1 head of cauliflower washed coarsely chopped
  • 6 cups of chicken broth
  • 2 cups of chopped cooked chicken meat
  • 1 cup of diced white onion
  • 1 cup of whole milk
  • shredded cheese to top

Instructions
 

  • Place the cauliflower, broth, chicken and diced onion into a large crockpot.
  • Cook on low for 5-6 hours, or until the cauliflower is soft and cooked through.
  • Using an immersion blender – or removing the soup and pureeing in a blender- puree the soup until it’s quite smooth. (or conversely, my daughter liked it “chunky”, so I took her bowl out before this step, you can leave it as is if wanted.)
  • Whisk in the milk, then leave to heat another 10 minutes or so.
  • Top with your choice of shredded cheese and parsley and enjoy!

    Did you change this recipe multiple times? I have used it on and off for a few years and it’s not at all how I remember it. I’ve had it bookmarked but you changed and eliminated some ingredients or I’m crazy lol

    I really liked this soup. However like the other reviewer said it could use a little kick. I sautéd the chicken and onion (doubled the onion) and add a tbsp of pepper, fresh garlic and red pepper flakes and a tsp of habanero powder. Came out really good.4 stars

    I really wanted to love this soup straight from the pot! Sadly, the cauliflower, chicken broth, chicken, and onion created a bland base. But then I realized that, apart from the onion, there were no savory ingredients that would normally boost a soup’s flavor.

    So … to doctor it up, I started with 2 tsp. kosher salt, 1/2 tsp. black pepper, and 1/2 tsp. dry mustard. It still needed “something,” so I kept adding this and that till the flavors rounded out.

    In the end, I think I ended up adding (roughly) 1/8 tsp. cayenne pepper, 1 tsp. crushed dried thyme, 1 tsp. fish sauce, 1-2 tsp. brown mustard, and 2 Tbsp. dry sherry. Oh, and I upped the milk by another cup for creaminess and threw in 2 c. shredded cheddar-jack cheese. It’s definitely not the original soup, but I thought my additions might count as a “Recipe Tip” just in case anyone else found their soup needing a little help. 🙂4 stars

    I’ve just had bariatric surgery so I’m on pureed soups for the next couple of weeks. I look forward to making this tonotomorrow while I’m at home recovering. Thank you. It’s right up my alley in terms of ease and flavour so I rate it 5 even though I haven’t tasted it yet. I will omit the milk and cheese as I am intolerant but it gives me a good base to use as a guide to which I may add zucchini.5 stars

    I was looking for a soup recipe that contained chicken and cauliflower; one where I could utilize the chicken broth that I just made. So I figured this one couldn’t hurt.

    I tried this last night, I added a couple of carrots and a little chilli powder just to give it a bit of a glow. I blitzed it as I like smooth soups but this recipe will now become a regular thing, it was so delicious, thank you for putting the recipe up. Like you I looked at the recipe and thought it would be a bit basic but it really was one of the best soups I’ve made. Thanks.5 stars

    Do you taste a heavy cauliflower taste? I like to hide cauliflower in soups because my family doesn’t care for it. I love it but wondered if it just tastes more creamy or if there is a distinct cauliflower taste.
