Candy Cane Fudge

 

This is a new, last minute concoction, born out of the desire to use up some of the candy canes that my children were gifted by Valerie when we went over to her place to bake cookies. I love the easy fudge recipe that I keep tweaking with different flavors; it involves no candy thermometer, always turns out and tastes amazing.

Ingredients Needed:
one can of sweetened condensed milk 300ml
9 1/2 squares of semi-sweet baking chocolate
1 tsp mint flavoring
2 candy canes, pulverized. crushed.annihilated.

In a large microwave safe bowl, and a 4 cup Pyrex measuring cup works perfectly, combine the chocolate and condensed milk.Microwave for one minute, then stir, then again for 45 seconds. Keep stirring until the chocolate is completely melted. Quickly mix in the mint flavoring.

Line an 8×8 baking pan with tinfoil, leaving little handles on two sides so you can pull it out completely when the fudge is set.

Pour the chocolate mixture into the foil lined pan, spread it out evenly and tap the pan on the counter a few times to get the air bubbles out.

Sprinkle the top of the fudge with your candy cane dust. I like a LOT on top. Mmm. Extra minty goodness.

Refrigerate 2 to 2.5 hours until it’s set. Using those foil handles, pull the entire block of fudge out.

Now, you have to keep this covered and sealed up tightly, or the candy canes will weep and get all melty. This doesn’t change the flavor but most certainly changes the look. Keep them well refrigerated and sealed up with plastic wrap until you are ready to serve, then cut and place them on a plate.

Such minty bliss.

Easy, no candy thermometer fudge with crushed candy canes. Minty madness at it's most delicious.

    I love peppermint and candy canes and chocolate and CHRISTMAS!
    I am buried under it all – and can’t get out – but still love it! I still want to see your house… and I am retired and have no time. How do YOU do what you do! You are AMAZING!
