  • Skill Level: Like most casseroles, this one is easy to make. Why not include your kids in the process and have them mix all the ingredients?
  • Total Time: This recipe will take approximately 70 minutes, most of which will be baking time. That gives you plenty of time to prepare the rest of your meal.
  • Variations: Why not add sauteed mushrooms and onions or vibrant chopped bell peppers to this recipe? You can try different cheeses or add even more cheese on the side with a Cheese Sauce. Make some Homemade Onion Soup Mix or Cajun Seasoning to mix in for extra flavour.
  • Tools Needed: You’ll need a medium frying pan and a 9×13 baking dish as well as a sharp knife and a cutting board.

What You’ll Need For Ingredients

Hash Browns: While you could grate your own potatoes for this, the process is time consuming and fresh potatoes inevitably start to turn brown if they aren’t used quickly. For the sake of ease, just use some frozen shredded hash browns. Dehydrated shredded potatoes could also work (just be sure to rehydrate them according to the package directions of course.

Bacon: Hickory smoked bacon will give you the best flavour combination for this casserole, but you can absolutely change it up. The main thing is to have plenty of crunchy bits of salty bacon mingled in with the melted cheese.

Cheese: This recipe calls specifically for grated parmesan and shredded cheddar cheese, but you can add to these or use alternate varieties of cheese. One way or another, you’ll want plenty of melted and gooey cheese. Don’t be afraid to add even more cheese to the top of the casserole, or try a variety of cheese with hot peppers in it.

How To Make Cheesy Hash Brown Casserole

  1. Preheat oven to 350°F and grease a 9×13 baking pan. Cook bacon until crispy.
  2. Mix potatoes, bacon, melted butter, onion, seasonings, and cheese in a large bowl.
  3. Put the potato mixture into the pan. Pour cream over it and dot it with hard butter.
  4. Bake for 55-60 minutes. Let rest for 5 minutes and garnish with chopped parsley.

Karlynn’s Tips and Tricks for Making Cheesy Hash Brown Casserole

Add Some Vegetables: Try adding some Buttery Garlic and Thyme Roasted Mushrooms on the side or even mixed into the casserole. Sautéed Green Beans would also make a lovely side for this casserole since green beans go well with cheese and potatoes.

Protein: While this hash brown casserole is quite filling on it’s own, you could also serve some Steak and Eggs to really boost the protein intake and fill everyone up. Or try adding some of your favourite breakfast sausage along with the bacon.

Make it Mini: Why not try making smaller versions of this, in a pie plate or an 8×8 square pan? Even little ramekins or miniature casserole dishes could work. Just adjust your cooking time accordingly and pay close attention so you don’t end up with a smoke-filled kitchen.

Storage Instructions

Fridge: Store the cooled casserole in a sealed container in the fridge for 2-3 days. It may start to get mushy after that.

Freezer: While you can freeze this casserole once it’s cooled, the texture won’t be the same once it defrosts.

Ingredients 

  • 16 ounces shredded hash browns, frozen
  • 4 slices cooked crispy bacon
  • ¼ cup melted butter
  • 1 small onion , diced
  • ½ teaspoon garlic powder
  • teaspoon salt , to taste
  • teaspoon pepper, to taste
  • ¾ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • cup half and half cream
  • 3 tablespoons hard butter, chopped into small bits

Instructions 

  • Preheat your oven to 350°F. Grease a 9 inch baking pan.
  • Dice the bacon into 1/2 inch pieces. Cook the bacon until it is crispy. set aside on paper towel.
  • In a large bowl mix the potatoes, cooked bacon, melted butter, onion, garlic powder, salt and pepper, cheddar and Parmesan cheese. Mix to coat and combine well.
  • Add the potato mixture to the greased 9 inch baking dish.
  • Pour the half and half cream over top, and dot with the hard butter on top.
  • Bake for 55-60 minutes until the potatoes around the edges are lightly browned. Let rest for 5 minutes then serve garnished with chopped fresh parsley on top.

    This sounds delicious — but I’m a little surprised you’re making it sound like Something Really New. This basic casserole has been around a long, long time. And you’re right, using different ingredients still makes it tasty.
    It’s especially good for Christmas morning. Make it up ahead of time, put in the fridge or freezer — then slap that baby into the oven when you’re barely awake. Yum.

    I shredded 2 large baked potaoes (Costco ones). I didnt have half and half so I used regular whole milk.

    After 55 minutes in oven, I felt they werent cooked enough, so I put in for another 10 minutes (total 65 minutes). This gave the edges some crispies, which we we fought over!

    We used pork sausage patties since we had no bacon.

    This was delicious and we will make again.
