  • Tools For This Recipe: For this recipe, you’ll want to have a cookie sheet and a large bowl on hand. I recommend using parchment paper on your cookie sheet to avoid sticking, and although it is not necessary, it’s always handy to have a cookie scoop.

What You’ll Need For Ingredients

All-Purpose Flour, Baking Soda, Salt: The base of the dry ingredients for these cookies, the baking soda will also help your cookies rise and spread slightly, giving you a soft, chewy texture. 

Butter, Sugar, Egg, Cream Cheese, Vanilla: This recipe calls for both brown sugar and granulated sugar. The reason for this is that when you mix both of them in a cookie recipe, you are left with a bit of crispness, but the brown sugar will still leave you with some chewiness and influence the flavours in the cookie. Karlynn’s Tip: Although artificial vanilla extract is perfectly acceptable and boasts a strong vanilla flavour, I recommend trying pure vanilla extract, as it offers a much richer and multidimensional taste.

Chocolate Chips: Although the kind of chocolate chips you use is a matter of personal preference, semisweet chocolate chips are the most popular choice because of their balanced flavour. Karlynn’s Tip: If you like a sweeter cookie, try opting for milk chocolate chips. For a less sweet option, try a bittersweet or dark chocolate.  

How To Make Cheesecake Chocolate Chip Cookies

  1. Preheat oven to 350ºF
  2. Beat together butter, both sugars, and cream cheese until light and fluffy. Add egg and vanilla and mix well.
  3. In a separate bowl, whisk together flour, baking soda and salt. Add to the wet ingredients slowly, mixing well as you go.
  4. Mix in the chocolate chips.
  5. Using a standard cookie scoop or tablespoonful, drop dough onto cookie sheets.
  6. Bake for 9-11 minutes. Remove from oven and allow to cool on the cookie sheet.

  • How to Bake Up Chewy Cookies: The secret to these cookies staying wonderfully chewy is to underbake them slightly. This way, they will be perfect every time! Remove the cookies from the oven when the edges are set, but the center is still slightly undercooked. Cool the cookies completely on the baking sheet, as they will continue to bake slightly and become perfectly chewy by the time they are cooled.

Storage Instructions

To keep these cookies moist and chewy, store them in an airtight container at room temperature for up to 5 days. I do not recommend refrigerating these cookies, as this will cause them to harden. If they do start to harden in the container, place a piece of bread in with them and close the lid; this will cause the cookies to draw moisture from the bread and soften.

Ingredients 

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup butter , softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 8 ounces cream cheese , softened
  • 1 tablespoon vanilla
  • 2 cups chocolate chips

Instructions 

  • Pre-heat your oven to 350°F.
  • Beat together the butter, granulated sugar, brown sugar, and cream cheese until light and fluffy.
  • Add the egg and vanilla, mix well.
  • Whisk together the flour, baking soda, and salt in a separate bowl. Add to the wet ingredients slowly, mixing well after each addition.
  • Mix in the chocolate chips.
  • Using a standard cookie scoop or a tablespoonful, drop dough onto parchment lined cookie sheets.
  • Bake for 9-11 minutes until the edges are browned and baked firm, but the middle of the cookies isn't set yet. Remove and cool on cookie sheets.
  • Remove the cooled cookies and store in a closed container at room temperature for up to 5 days, or freeze in a closed container for up to 3 months.

Notes

  • If the cream cheese isn’t soft, you will have chunks of cream cheese in the batter that won’t mix in properly.
