  • Total Time: This meatloaf will take you about 1 hour and 45 minutes from start to finish. Plenty of time to get side dishes made.
  • Variations: How about making your own Meatloaf Seasoning or some Meatloaf Sauce? Try using different cheeses, like a gooey Mozzarella or a spicy Monterey Jack. Add some vegetables to this meatloaf, either diced up small (mushrooms or peppers) or grated into fine shreds (carrots). Change up the type of ground meat you use.
  • Tools Needed: For this recipe, you will need a small bowl, a medium bowl, a loaf pan, some spoons, and a meat thermometer.

What You’ll Need For Ingredients

Ground Meat: For this recipe, I used both beef and pork. A standard ground beef is often people’s preference for making meatloaf, but any ground meat will work as long as you season it appropriately. Ground turkey and ground chicken are very healthy and low fat, but don’t tend to have much flavour on their own. Ground pork is often inexpensive and usually flavourful, but has more fat. Use whichever ground meat you like best.

Cheese: The recipe calls for cheddar of blue cheese, but you can use most grated cheeses. Mozzarella will give you a gooey, stretchy center when it melts but isn’t very flavourful on its own. Try a grated cheese blend for some fun variety, or something with peppers in it for spice. So many options.

Bread, Eggs, Milk: These ingredients are the cement that will hold the meat together in its loaf shape. They’ll also provide moisture and help to add volume to the meatloaf. Without them, the meat would shrink down considerably, becoming more of a giant hamburger than a meatloaf.

How To Make Cheese Stuffed Meatloaf

  1. Preheat oven to 350°F. Grease a loaf pan and set it aside.
  2. In a small bowl, mix egg white, water, bread crumbs and cheese.
  3. In a medium bowl, combine the bread and milk. Then add the meat, onion, and seasonings. Mix well.
  4. Divide meat in two. Press half the meat into the bottom of the load pan. Cover with cheese filling. Add remaining meat and press it flat.
  5. Bake for 1.5 hours.

Karlynn’s Tips and Tricks for Making Cheese Stuffed Meatloaf

Pairings: Meatloaf, especially when it’s stuffed with cheese like this one, is heavy and filling. Balance that out with a hefty serving of vegetables or a salad. Meatloaf also goes well with basically any potato dish you can imagine. Try some Make Ahead Mashed Potatoes or The BEST Buttery Garlic Mashed Potatoes, with some gravy on the side.

Meat Options: While you can absolutely change the meat that you use for this recipe, you’ll want to adjust accordingly. Every type of ground meat offers a different flavour profile and fat content. If you choose not to use ground pork, for example, you may want to add some lard or bacon fat to keep the rich and fatty pork taste. If you use an extra lean ground beef, or something even leaner like ground turkey or ground chicken, you’ll need to add fat in somehow and be prepared for the loaf to shrink significantly.

Storage Instructions

Fridge: Once it’s fully cooled, you can store this meatloaf in the fridge in a sealed container for 3-4 days.

Freezer: You can freeze this meatloaf in a sealed container for several months. Store it whole or in individual slices for easy defrosting and reheating later on.

Ingredients 

  • 3 slices bread, torn into pieces
  • 1 cup milk
  • 1 lb ground beef
  • ½ lb ground lean pork
  • 1 egg yolk
  • ¼ cup minced onion
  • 1 ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon mustard, dry
  • ¼ teaspoon sage
  • ¼ teaspoon celery salt
  • 1 Tablespoon Worcestershire sauce

Cheese Filling

  • 1 egg white, lightly beaten
  • 1 tablespoon water
  • 2 slices bread, torn into pieces
  • 1 cup cheddar cheese or blue cheese, grated

Instructions 

  • Preheat oven to 350°F
  • Grease one loaf pan.
  • In a small bowl, prepare the cheese filling by mixing the egg white and water, toss lightly with the bread crumbs and the cheese and set aside.
  • In a medium large bowl mix the bread and milk. add in all the other ingredients except for the filling.
  • Divide the meat into two portions and press one portion into the bottom of the loaf pan. Cover with the cheese filling.
  • Top with the remaining meat mixture flattening it out
  • Bake in your preheated oven for 1 hour and 30 minutes.
