Pepperoni Pizza Rolls in White Plate Over a Notebook

Oh my word, I do NOT want to be back in the swing of things. Not one bit. Nope. Nada. Can’t my family just stay on vacation permanently? Can’t the kids just stay at home and learn? Can’t I stop driving them to school? Sigh.

That whole whining up there is part of the reason that we are going to be homeschooling next year. Our lifestyle has changed so much in the past few months with Mike working at home that it seems we are either coming or going or staying or leaving…well, you get the picture. Next year is going to be a big adventure for this family, just wait and see! There are so many changes that if I don’t get excited over them, they will simply overwhelm me, so excited it is!

Meanwhile, the kids are back in school. They still have the sniffles but for Pete’s sake, they need to go back, it’s been almost 6 weeks I do believe. Apparently my family believes in a winter vacation just like summer vacation 😉

With the kids back in school comes our crazy schedule. School. Piano and voice lessons. Cubs. The Cook Off work for me. I start looking for cheater snacks, easy food that is still yummy and healthy.

These cheater pepperoni pizza rolls are just that.

If you make sure to get a nitrates free pepperoni, low-fat cheese, some lovely cheese tortillas? These definitely make my list as a good choice for my kids to snack on.

You do this.

You roll these little suckers up, pop them in the oven until the cheese melts and boom! Done!

OR you nuke then in the microwave, which takes less than a minute. Even cheatier!

This is the perfect snack for after school homework time, chock full of protein but still they are light enough that the kids will have their appetite left for supper.

The lovely thing? No weird chemicals or preservatives in them, you get to choose the tortillas that you want to use and the fillings. Most pizza roll ups and pops and the like are chock full of nasty things. (Though strangely I crave a Pizza Pop about once a year, seriously. Then the kids get to take some in their lunches due to my weirdness.)

So, anyone else have the January Back to School Blahs? Are you having a hard time getting back into the swing of things or are you just sighing in relief that the kids have done back to school and it’s all quiet now?

Healthier cheater pizza rolls that take only minutes to make!

Ingredients
 

  • 1 large tortilla of your choice I used a cheese tortilla
  • 1/2 cup (10-12 small slices) nitrate free pepperoni
  • 1/2 cup low- fat old cheddar cheese
  • 1-2 tablespoons pizza sauce of your choice

Instructions
 

  • Spread out the pizza sauce on the tortilla. 
  • Place the pepperoni slices on top of the sauce as evenly as possible. 
  • Sprinkle the cheese over the top. 
  • Roll up the tortilla and place on a plate (to microwave) or a baking sheet (to heat in oven. 
  • Either microwave the tortilla until the cheese is melted or cook in a 400 degree oven until the cheese is melted.
  •  Remove and slice the tortilla into rolls. Serve to starving feral wolf children
