  • Variations: Try changing up the type of cheese you use. Try something with hot peppers in it, or something extra smoky. Add a splash of hot sauce to the soup for a bit of heat, sprinkle in a bit of your favourite seasoning blend. Maybe make some homemade Cajun Seasoning or Italian Seasoning and add a dash to the topping or the cabbage. Mix in a handful of bacon bits. So many options.
  • Tools Needed: For this recipe, you’ll need a sharp knife, a cutting board, a can opener, an 8×8 casserole dish (2 quarts), a large saucepan, two small bowls, and some spoons.

What You’ll Need For Ingredients

Cabbage: Any cabbage will work here, as long as you don’t skip the cooking step. Cabbage contains a lot of water and shrinks significantly as it cooks, so if you don’t cook it first, you’ll end up with a very watery casserole. Try a frilly savoy cabbage or a bright purple cabbage for fun.

Filling: This recipe calls for cream of mushroom soup, but you can use any creamed soup that you like. You could even make your own soup to use, though you may need to adjust the amount due to added liquid. The mayonnaise will add even more creaminess.

Topping: This recipe calls specifically for Ritz crackers, but you can use a different butter cracker or even plain breadcrumbs for this. The grated cheese can be anything your heart desires, but choosing something with a distinct flavour will be the best to balance the richness of this dish.

How To Make Cabbage Casserole

  1. Preheat oven to 350°F. grease your baking dish and set it aside.
  2. Chop cabbage.
  3. Melt butter in a large pan. Add chopped cabbage and onion. Saute for 8-10 minutes, stirring often, until the cabbage is tender and cooked down. Add pepper to taste and transfer to prepared baking dish.
  4. In a small bowl, mix soup, mayonnaise, and garlic powder. Spread over the cabbage in the pan.
  5. In a separate small bowl, crush crackers, drizzle on melted butter, and stir. Mix in grated cheese. Sprinkle the cracker and cheese mixture on top of the casserole.
  6. Bake for 30 minutes.
  7. Let cool for 5 minutes before serving.

Karlynn’s Tips and Tricks for Making Cabbage Casserole

Beef it Up: Make this side dish into a whole meal by adding some ground meat. To add ground beef to this recipe, fry up one pound of lean ground beef and drain. Set aside in a bowl. Continue to saute the onions and cabbage as directed. Once the cabbage and onions are done, add the ground beef back in, season, and transfer to the prepared baking dish.

More Ideas: For some added colour and a complimentary flavour, try sauteeing some chopped or julienned bell peppers with the cabbage and onions. They’ll cook down beautifully and add a pop of sweetness. Shredded carrot also works well with cabbage. For some extra bits of salty crunch, add some homemade or storebought bacon bits.

Storage Instructions

Fridge: Once the casserole is fully cooled, you can store it in a sealed container in the fridge for 3-4 days. Reheat it in the microwave or the oven, depending on whether you’d like to get it a bit crispy again.

Freezer: Once this is fully cooled, you can store it in a single sealed container or multiple small portions. Freeze for 2-3 months. reheat as needed. The texture will likely change, but you should be able to get it a bit crispy again if you reheat in the oven.

Cabbage Casserole

Ingredients 

  • 1 green cabbage, small
  • 1 sweet yellow or white onion, diced
  • ½ cup salted butter
  • 10 ounces cream of mushroom soup, can, condensed
  • ¼ cup mayonnaise
  • ½ teaspoon garlic powder
  • pepper to taste

Topping

  • cup melted butter
  • 1 cup old cheddar cheese, shredded
  • 30 Ritz crackers, or other buttery cracker – crushed

Instructions 

  • Preheat your oven to 350°. Lightly grease a 8×8 baking pan or a 2-quart casserole dish.
  • Chop the cabbage but leave out the center core if it is too dense / thick.
  • In a large saucepan add the butter and melt it and add in the chopped cabbage and onion. Saute for about 8-10 minutes stirring often until the cabbage cooks down.
  • Season with pepper to taste.
  • Transfer cabbage mixture to prepared baking dish.
  • In a small bowl, add the soup, mayonnaise and garlic powder and mix well. Spread this mixture over the cabbage in your pan.
  • In a separate small bowl, crush the Ritz crackers then drizzle the melted butter over top and stir. Add in the grated cheddar cheese and stir to combine. Sprinkle this mixture over top of the cabbage in the baking pan.
  • Bake for 30 minutes or until the topping is nicely browned.
  • Remove from the oven, let sit for 5 minutes before serving.

Notes

    What could you use in place of cream of mushroom soup? Love cabbage, not a fan of cream of mushroom soup.

    Loved this!!! I did only use 1/2 stick butter and 4 Tbs of olive oil. I added the ground beef with 1/2 tsp salt. It was delicious and smelled heavenly while in the oven! I will add 2 to 3 cups of cooked jasmine rice next time. There was a lot of juice in the bottom of the dish after resting. Rice will help absorb this juice.5 stars

      The beef is 100% optional. NOT part of the main recipe!

    For those of you asking for the nutritional content I checked on this “healthy” meal and if you eat it as stated with no substitutions made as directed this has 694 Calories per serving, 56 grams of FAT, 26 grams saturated Fat, 105mg of cholesterol, 1221mg of sodium, 42 grams of carbs with grams of 14 sugar & 13 grams of protein
