After I made my Cheesy Mashed Cauliflower I knew that dill was next on my list. Dill is such a spring/summer flavor, especially in our family. It brings to mind baby potatoes and cream, which in turn led to me thinking hmmm, can I make a delicious mashed cauliflower instead of using potatoes?

Yes. Yes, I can, and yes I did, and yes it’s delicious!

There’s just something so darn right about tricking my family into eating their vegetables, I’m not gonna lie. It’s also so easy that I feel like I’m cheating, something this tasty shouldn’t be that easy, or good for you.

Butter & Dill Mashed Cauliflower

Who needs potatoes when you can have buttery dill mashed cauliflower?

Ingredients
 

  • 1 cauliflower cleaned and chopped
  • 1-2 teaspoons dill
  • 3 tablespoons butter
  • salt and pepper to taste

Instructions
 

  • Steam the cauliflower until it’s soft and falling apart. 
  • Drain well.Add in the butter.
  • With a hand blender or potato masher, mash the cauliflower until smooth.
  • Stir in the dill until blended.Serve & enjoy!

    I am going to try this recipe. I made mashed cauliflower yesterday for Easter dinner as I made a ham and my sister-in-law brought scalped potatoes. I mashed the cauliflower with herb and garlic cream cheese but was really impressed.

    Mine are converted as well. however my daughter still loves everything as raw and crunchy as can be. She’ll eat this, but cooked carrots? Never!

    I”m Ukrainian, what can I say? Dill belongs in everything! Really though, it’s about tricking my palate into thinking it’s as good as potatoes. Not quite, but I was really happy with it as a carb substitution!
