Do you want to know what  the best thing about this recipe is? It gives you an excuse to go and buy yourself a bottle of bourbon.

Right there, that fact makes this is the best recipe for chicken I’ve come up with yet.bTo add to it, you also have to go out and buy some bacon jam to go with it.

Amen.

This recipe has three ingredients: Bourbon, Bacon Jam and chicken breast.

Winner winner bourbon bacon jam chicken dinner!

I really like the President’s Choice bacon jam found at Superstore, but you can use homemade or another version.

Bottle of Jim Beam brand bourbon and a cup of bacon jam

First, pour yourself some bourbon and mix it with a classic coke. Bourbon n’ coke. You’re ready to cook!

Taste the drink to make sure it’s good, then add more bourbon to taste.

Take about 1/3 cup of bacon jam and mix in 1-2 tbsp of bourbon. Add bourbon to taste.

Have another drink of your bourbon n’ coke as a reward for working so hard on dinner.

Set the sauce aside and grill up 2-4 chicken breasts on the BBQ, enjoying perhaps another bourbon and coke at the same time.

When the chicken is almost done, brush on the sauce. Grill for another 5-10 minutes.

When the chicken is cooked to a safe 165 degrees in the middle, top with some more bacon jam, warm for 3 minutes and then serve onto plates.

Ingredients
 

  • 12-24 ounces (2-4) chicken breasts
  • 1/3 cup bacon jam
  • 1-2 tablespoons bourbon or to taste

Instructions

    That sounds absolutely brilliant!! 🙂 I’m in a major hot chocolate crush at the moment, so I’d probably pour a nip of bourbon in my cocoa of a morning. 🙂

    May I suggest some sort of Bourbon Balls? I’m sure you can come up with interesting variations on the basic.

    Here’s a description, from wikipedia of the basic bourbon ball:

    “The most common variation for home cooks is regional to the southern United States and incorporates crushed cookies, corn syrup, chopped pecans,
    and bourbon into a mixture that is formed into balls and coated in
    powdered sugar to prevent the evaporation of the alcohol. Once molded
    they are aged for up to a week, in a sealed container in a cool dark
    place, before serving. They will keep for up to a month before becoming
    too feeble to pick up in one piece as the evaporation process desiccates the packed structure of the cookie.”
